23.01.2022 #EATFIT Zucchini Pancakes. Fresh, healthy and tasty! This Zucchini Pancake recipe by @raimeeleigh.fitfood is the perfect way to kick start your day the right way. Recipe below! Make sure you share your creations with us by tagging #EATFIT Ingredients: 1 medium zucchini (150g without liquid) ... 1/2 cup chickpea flour 1/2 tsp garlic salt 1/2 tsp paprika 1/2 tsp black pepper 1 tbsp savoury yeast flakes 1/2 tsp baking powder 1 tbsp of apple cider vinegar Water as needed Method: 1. Grate the zucchini and squeeze out as much liquid as you can. 2. Place the zucchini and all dry ingredients into a mixing bowl, then add vinegar. 3. Slowly add water until you get a thick pancake like consistency. You dont want it to be too runny. 4. Pour the batter onto a low heat, lightly greased pan into the size of pancakes you would like. The smaller the quicker they cook. 5. Once you see the edges turn a golden colour flip and let the other side cook for a minute. 6. You can have them just as they, are but I like to add some healthy sides! For example some spinach, avocado and eggs. #TheAthletesFootAU #eatFIT #socialFITnacing
