23.01.2022 Heres a recipe for the perfect crunchy biscuit to enjoy with a cuppa. Thank you to keen baker, our resident Cheryl, for sharing one of her favourite recipes. Cheryls baked treats are always popular when our residents get together. Hope you enjoy Cheryls crunchy, nutty treat. Ingredients:... 170g self-raising flour 85g golden caster sugar 55g ground almonds 140g butter 1 tspn almond extract pinch salt 55g flaked almonds 1 egg white Method: 1. Preheat oven to 180C. Line or grease a baking tray. 2. Combine all the ingredients, except flaked almonds and egg white, in a food processor and blend until it forms a soft dough. 3. Turn dough onto floured surface and roll out to 1cm thickness. Using a fluted cutter, shape the biscuits. Arrange on the prepared baking tray. Brush biscuits with egg white and sprinkle with flaked almonds. 4. Bake in the pre-heated oven for 10-15 minutes until golden brown. Allow biscuits to cool before serving.

18.01.2022 Flashback Friday! Do you remember when ATMs first appeared?

18.01.2022 Thanks Chef Teresa (from our Kingsford Terrace Corinda village) for your lamington receipe! Lamingtons Ingredients... 125gm Butter Softened 1 cup Caster Sugar 1/2tsp Vanilla Extract 3 Eggs 1 cup SR Flour Sifted cup Milk 2 cup Desiccated Coconut Icing 3 cup Icing sugar Mixture cup Cocoa Powder 1 Tab Butter Softened Method CAKE Oven 160C Fan Forced Grease & Line 3cm deep 20 x 30cm pan Beat butter, sugar & vanilla until light & fluffy. Add eggs one at a time beat well after each addition Sift the flour over butter mixture. Stir to combine Add the milk. Stir to combine. Repeat. Spoon into prepared pan. Smooth top. Bake for 30minutes or clean skewer test. Let cool in pan for 10 minutes. Turn out onto wire rack. Cover with clean tea-towel. Set aside overnight. ICING Sift Icing Sugar & cocoa into bowl. Add butter & boiling water. Stir unto smooth. Cut cake into 15 pieces. Place coconut in a dish. Using a fork dip 1 piece of cake in icing. Shake off excess. Dip into coconut. Repeat with remaining cake. Allow icing to set approx. 2 hours
