21.01.2022 Fun fact - frangipani flowers have been used in decoctions for the treatment of diabetes in China and Mexico for centuries. Recently there has been some promising research on this property. I can’t help but wonder about all the untapped or forgotten medicines around us that we take for granted. There’s no taking these fragrant blooms for granted on morning strolls. They’re so bright, cheery and uplifting. I loved stopping and smelling these again today and it was a reminder to slow down and appreciate the beauty right under my nose. What reminds you to slow down and appreciate nature and life?

15.01.2022 Clinic Update: It’s been 2 years since I’ve been home to the family farm! The countdown is at the pointy end...tomorrow I fly to Qld for 2 weeks. On the farm I will be spending much time barefoot , eating produce straight out of the ground or off the tree, getting my hands dirty, slowing down to smell the roses for real. Mum’s rose garden is Amazing! ... I look forward to seeing you in the New Year bright eyed and refreshed! 09.01.2022 Smoked Trout Quiche 1 Portion Huon smoked trout 10 eggs beaten 2 potatoes thinly sliced... 1 zucchini thinly sliced lengthwise 2 tablespoons capers 1/4 cup natural Greek yoghurt 1 bunch of asparagus trimmed and sliced lengthwise 1 spring onion sliced finely 1/4 cup parsley chopped finely Sea salt Grease a quiche dish with olive oil. Layer the potato and zucchini in the bottom and sides of the quiche dish as though to create a crust. Layer evenly into the dish the asparagus, capers, flaked smoked trout, parsley and spring onion. Add the yoghurt to the beaten egg mix and season with sea salt to taste. Bake in a moderate oven for approximately 45 minutes or until set and golden on top. Serve hot or cold with a side of greens.
