24.01.2022 Garlic butter wreath I cheated on my sourdough starter today with *gasp* instant dried yeast As soon as I started this process though, I marvelled at how I used to think yeast bread took a long time! The 3 hours this took has got nothing on the 14-16 hour sourdough journey! So, I’m glad I popped back to say hello to this delicious instant yeast twist and anything covered in garlic butter and baked until golden will always be alright by me



11.01.2022 We have been loving eating fresh baked sourdough bread for the past couple of months! There isn’t anything better with a hot coffee on Sunday morning than a thick slice of fresh bread with butter! But I have put my little sourdough starter to sleep in the fridge for a while...it was becoming ‘one more mouth to feed’ and naturally it was the mouth I tended to forget about first! So while the starter rests and slowly chows down on its weekly top up, I’ve turned my attenti...on to these cookies to help me feed the human baby!! Filled with oats, flaxseed, coconut oil & brewers yeast, they are said to help boost milk supply. Which is great, because my baby sure can feed!! It will be interesting to see if I notice a difference...either way I made sure to add chocolate chips to these for the taste factor and will diligently munch away, all in the name of good parenting

11.01.2022 I nervously pulled this bad boy from the fridge yesterday to bake some bread during the week! My lovely starter had been neglected for at least 3 weeks, with no feeds, no love, zero attention But after 24 hours at room temp and 3 feeds (of equal starter/water/flour) it has tripled in volume since its last feed and will be ready to bake with again tomorrow! Gotta love a nice low maintenance baking buddy! This sourdough journey is totally debunking a lot of what I thought... it took to make great bread at home. It’s also making me ponder the idea of some sourdough tutorials (as well as many others) on a Patreon/membership type platform! I’d love to know your thoughts! 07.01.2022 Marmalade results, round one! This was the first time I have ever made a jam/preserve from the juice of a fruit, instead of the whole fruit itself and it is a totally different game! Starting with the unfortunate misreading of the recipe, I threw all ingredients in together (in slightly incorrect quantities ) just as I would when making plum or strawberry jam, when the recipe actually called for cooking in a few stages - juice and rind first, then adding the sugar. This mea...nt that I had no real guide for how long to cook the marmalade! With a whole fruit jam, you can easily see when the liquid has evaporated and the jam is becoming a consistency suitable for toast. This time, I had to rely more on the science of pectin (fruit’s natural setting agent) and sugar caramelising...and science was never my strongest school subject! The result is a very delicious, tangy, slightly bitter sugar syrup. Incredibly moreish...but runs right off the toast while eating! Back to the stove to try again

02.01.2022 A little while ago, I asked if anyone had a food product or item they’d love to know more about & that I could practice, develop and then share a recipe for. When marmalade was suggested, I knew I wanted to have a try and when lovely neighbours happened to drop off a huge bag of oranges yesterday, today was the day to have this bubbling away on the stove. In my memory, marmalade is the bitter, sour surprise you get when you think you’ve just spread apricot jam on your toast!... But my tastes have changed and now the idea of a sweet, zesty, orange peel filled jam is right up my alley. Having never made marmalade before, I thought I would follow a couple of recipes exactly before tweaking and making my own changes. However, after I misread the first recipe while rocking the baby it turns out I’m jumping straight to my own variation Wish me luck!
