25.01.2022 Brunch today after strength training and 32km bike... This is a version of my Breakfast Burrito recipe that in The Beet Retreat Nutrition Guide and Meal Planner! This is in fact the super super speedy version and made with silken tofu not firm. Basically it’s organic silken tofu cooked off for 5-10 mins with some black salt, turmeric, nutritional yeast, curry powder, black pepper, splash of tamari, garlic powder... I add a 1/4 onion to soften first, and add pre cooked sw...eet potatoes to warm through toward the end...and often greens but I had a side salad today. I also warmed this wrap with some herbs... The whole thing takes 10-15 minutes and it hits the spot big time. Whether your Omnivore or Vegan, when you hit 50 DO increase your calcium and healthy plant protein a bit as we just don’t absorb certain nutrients as well as we age and this can lead to quite serious health issues like bone density problems that of course affect 1 in 3 women over 50 and 1-5 men. There’s so much we can do with this basic recipe, just keep experimenting with your seasonings and veggies! 24.01.2022 Fruit is Life!!!! Such a productive morning with a 5am walk by the lake then home for a short weight session and 90 mins of gardening and garage tidying while listening to The Sustainability Agenda podcast.. It’s another glorious days here in the Noosa hinterland... warming up to 30c though but so much more pleasant than many parts of australia this week who are in the grip of a heatwave. ... While this part of Queensland is more humid than where The Beet Retreat was previously located in the Yarra Valley but wonderfully it’s not as hot or oppressive either! I don’t think it’s reached 40 since I’ve lived here and generally the low-mid 30’s are considered the REALLY hot days up here! I get that humidity bothers many but after training/racing in Costa Rica for 4-5 weeks in 2014 I realised I actually preferred it to dry heat. That’s when the SE QLD dream was born! I can do this! I nearly went a smoothie bowl or oats and papaya this morning...both are favourites of mine, but what won me over big time was a bowl full of fresh fruit from Saturday’s farmers market haul! Papaya, mango, banana, orange, blueberries with a drizzle of black tahini and crumble of peanut butter! After the photo I added a tablespoon of ground flax and hemp seeds and walnuts also! And I may have eaten 20 or so cherries straight after gardening Today is gonna be a fantasticly productive day! I can feel it cos I’ve fuelled for it! 21.01.2022 Fabulous 30km paddle up into the Everglades today... I haven’t been up there since March. Local friends Janelle and Michael sent me a late afternoon invite to join them yesterday and who am I to knock back an excuse to get out on the surf ski and paddle across my favourite lake and up into this wonderland. We went up to Camp 2 where a friendly crow popped in to hang with us a while while we ate our lunch. Lots of other bird life and a little goanna swimming across ... ... I spoke to the guy who works for Kanoe Kapers who hire good double sit on kayaks and he told me they are $90 for an 8 hr hire or thereabouts so if you come stay and want to head up to Harry’s Hut or across where I did my paddle/hike/paddle on Saturday morning I think it’s well worth splashing out on So of course im in the hammock enjoying post paddle smoothie bowl bliss right now (I’ll share a pic and recipe later.. it was random as always and delicious!) 19.01.2022 Sitting in the tub with the light of the bright moon shining in on me, I was taken back just now to my first solo hike on the Larapinta Trail in 2015. By chance I coincided with the full moon on part of the 12 day End 2 End of this ruggedly magnificent 230km Track through the West Macdonnell Ranges in the Northern Territory. For the first and only time since I took a proper camera... and little gorilla tripod. Looking at these images now I think it was worth it. My pho...ne never captures the moon like this. I loved the accidental plants shadow on this first image... like a hand painted plate I stood outside earlier just to breathe in the cool night air, to listen, to smell, to absorb the energy of moon, stars, earth, air, trees, night creatures... Now, through the open louvres by the tub I see and hear it all juxtaposed by the warmth and fragrant lavender of my bath salts... What a privilege it is to move between the worlds of comfort and simplicity. From this fine home to my tiny tent, a full kitchen to cooking free bushwalking, from tubs to no shower for a fortnight. These are the contrasts that make my life complete. I am returning to long distance hiking next year. It’s already been 2 years this week since my last. Too long. I’ll sleep so well tonight. I can feel it. So much calm and comfort. So much connection to outside, inside. In my soul. From this mornings pre-dawn hike to tonight’s dialogue with the night sky. 18.01.2022 Today I celebrate my legs! Not only have they supported me for 58 years they’ve taken me to some amazing places and allowed me to participate in some extraordinary adventures! Though the skin is a little more scarred and marked than in my 20’s and 30’s they are probably in better shape due to all the mountains and miles they’ve climbed and covered! They may not be Tina Turner class but I think they’re awesome! And I even have a V for vegan scar on my right shin no ...I’m not self harming one was from a kick from my old horse Jordan (it was accidental) and the other an adventure race accident and when I got up here and had tanned legs again I saw it! 18.01.2022 Organic Sourdough loaves straight out of the oven making the kitchen smell AMAZING!!! Much better rise on my free form fruit loaf today... I cook it on a pizza stone. Starting two more now also...to cook on Saturday or Sunday... ... I have guests coming in tomorrow! They just booked an hour ago via Airbnb where I do a basic offering with just breakfast supplies provided (including a sourdough loaf) so it’s almost zero ongoing input from me unlike when peeps book via the website where food and connection are very much part of a stay. Just as well it’s an Airbnb one cos I’m cooking a lot for my friends engagement party Sunday. It’s a fab thing to diversify our income streams... it takes a bit of stretch and creativity and discomfort sometimes but change is just part of life hey! Once you accept it, you embrace it! 15.01.2022 How’s your eyesight? This little guy was sitting atop my moon boot at the back door into the garage ...and didn’t budge as I absentmindedly went to shove my foot in it I love Bearded Dragons and this ones just a baby so incredibly gorgeous! I picked him up and carried him over into the big section of bush that I leave natural for insects and native flora and fauna... ... He sat there for a while thinking We aren’t in Kansas anymore Toto.. or something like that before I gave him a little tickle to send him off under a log and leaf litter.. Hoping all will be well and he’ll be happy in his new patch or find his way back to his own digs which would be somewhere very nearby anyway I’m sure! It’s funny he was on my moon boot cos 3-4 weeks ago it was a cane toad sitting on it after I clearly locked him shutting the garage up a bit late one evening... 10.01.2022 It’s beginning to smell a lot like Xmas Hands up who woke up this morning and it felt like Christmas Day! OK. Probably no one but me ... Why? I have no flipping idea! Well, yes I do. Kinda. Its the first of December. It rained this morning and there’s that delicious feeling I recall on some Christmases past when I shared my life with someone special and it’s rained on Xmas morning but it was warm and it felt so free and tropical and magical... That feeling is wrapping me in it’s arms this morning and it’s delicious! So funny how that stuff pops out of the blue isn’t it I’ve decided this year, for the first time in many Im going out into the bush to find myself a feral pine tree to bring home. There’s lots around here unfortunately (now almost fully reclaimed pine plantations) and I’m sure it would be a community service to do so (hmmmm maybe I should do that cut and daub thing after ) and tidy up the lose ends of the year and prepare for the 2021! Ebooks are the priority! The Nutrition Guide with wonderful input from @greenstuff_nutrition has now had its final tweaks so it’s over to wonderful Helen to cast her expert editing eye over and today I start the final tidy and tweak of the meal planner! I’m gardening each day, plants are growing like crazy, the blueberries are out and my Maggie family has decided to leave them alone now happily! Maybe they saw my post Yup! I’m like a kid on Xmas morning today... right down to going now to jump on my bike and ride down the road with my best buddy Mac. 10.01.2022 Pelican High Flyby Look closely and you’ll see him. Usually they fly in low... when I was out on the water one came really close by me, low. ... That always brings a big smile to my face and I call out Good Morning Beauty! Thank you! And mean it Usually there’s a group, not solo. Up to 12. They glide so effortlessly by me out there on this lake. Heading to where the fisherman put in their boats. I guess if the lives of the fish are being taken then the lazy Pelicans are at least getting some of that Pelicans are so graceful in flight... it’s a privilege to witness them just living their life out there... such a simple one. Perfectly content. Following their nature. Not trying to change anyone or anything. Adapting. Surviving. Making the best of opportunity (discarded fish guts ) I’m awake at crazy o’clock this morning planning my day and week. Training. App. Chores. Test recipes for my very first external party catering gig!!!! I’ve been asked before and always said no. Just last week I said no to a 4 night x 14 person retreat gig. I thought about it but it just wasn’t worth the stress I know I’d feel. To me my peace of mind comes before making $$. But this one came in a couple of days ago from a friend and it’s a gathering of 25. Finger food. Pretty straight forward. I can do that :) It felt a good fit as soon as I saw her text come in asking. Seems the universe wants me to branch out. And heaven knows my bank balance does still no love for the B&B up here but it will happen. It took a couple of years in Victoria to really kick in. Here I plan to only be operating as a B&B 2 weeks a month anyway. I worked far too hard in Vic. Work smarter. Diversify. Create. Grow. Nothing stays the same nor should it. The App progress continues. I’m loving it again. I froze in overwhelm for a few weeks. Back on track. Self belief. You got this. 10.01.2022 More beauty from the Upper Noosa River. There are so many adventures to be had up there and what I love is that they are all very low key and respectful to the pristine environment it is. Paddling up into the Everglades is one of those must do’s if you come to Noosa, in my opinion anyway you can opt for easier ways like driving to Harry’s Hut and taking a bit of a walk, getting one of the Eco tours offered by @habitatnoosa which I believe give you an option to go to Har...ry’s by their slow cruising boat or picking up a canoe part way and getting the best of both worlds... For me of course I’m always going to explore nature’s majesty under my own steam if possible and you have that choice also via Kanoe Kapers. It was a 30km today from Elanda Point to Camp 2 (about 3-4km past Harry’s Hut) and back again and Lake Cootharaba was predictably choppy at 1230-1pm coming back... usually is as the day wears on there! In the last pic you’ll see my smoothie bowl du jour I’ll share the recipe (as I recall it) below in the comments. 09.01.2022 Sometimes tiredness catches up with me Today this gorgeous gorgeous couple headed home after spending 12 days here. I thought the last two couples, here over Christmas and NY would be an extremely hard act for any guests to follow but who am I but someone continually amazed and delighted by the calibre of people I get to welcome and host in my home! What an incredible job I have! It’s been a full on few weeks as I also continue to deal with a slow repairing foot p...ost surgery 6 weeks ago... it’s pretty impossible I stay off ones feet when ones job (and joy!) involves cooking for others each day! This morning these two naughty but beautiful people insisted on cleaning their room thats been home for them for nearly 2 weeks... resistance was futile Nat said it’s been like staying with her mum in far away Germany and I’ve had that said before... as someone who never had the honour, I take it as the highest compliment as a host tbh always makes me feel a tad emotional thinking of my own... I know that feeling of being cared for as only a mum can My new guests arrived and we had a lovely chat until tiredness came over me at 2pm like a wave and I excused myself and sunk into a deep sleep... waking later to this note and delicious raw vegan dessert from a Melbourne friend who had arranged to pop in briefly to see me before she returns to Vic.... I’d slept right through it!! OMG!! im so so sorry @rawambitiongeelong I can’t believe it! I totally forgot! I’m the worst! And the sleepiest obviously She of course laughed it off and I scoffed her amazing dessert Next time darling girl! OMG! 09.01.2022 I have a catering job on the weekend and I’ve never done one before A friend up here asked me a couple of days ago. 25 peeps. Finger food. This Sunday. I already knocked another back a couple of weeks ago. Not because I don’t need work. I do! The B&B is sooooo quiet. Still! But I said yes to this one with full disclosure of my lack of experience and my performance anxiety ... As my friend said it’s a great place to start... and she’s right, if im going to diversify (again ) it is. And clearly the universe is giving me a nudge in this direction as it has with everything I do in life it seems! So Im back in the kitchen making stuff that may be suitable beyond the crudités, fruit and dips on grazing platters that I’ll be doing... I know where this stress i feel about this sort of thing comes from. And that’s cos I was a totally dud cook til I went vegan at age 50 in 2012. I was the one given bread sticks and coke to bring for the family gatherings... no word of a lie. I was that bad at cooking for anyone beyond me and my partner and maybe two friends for dinner (and that would always bring on anxieties also) My family and close friends think it’s hilarious and kinda awesome that im now actually known for my healthy, tasty, good looking meals and actually TEACH others! I do too ! At age 52 I started the B&B and had to self learn how to cook for a few people! It was awful for me tbh. Hours and hours of over complicating things and desperately seeking approval for each and every meal.. it still lingers and I see it on occasions like this when im asked to do something out of my comfort zone with food for others. The thing is I also know that if something presents 2-3 times like this. Unbidden. It’s time to reconsider... For the real cooks out there who have done this kind of thing all their lives, raised families and fed legions, you won’t get it But for others who reached middle age getting away with stuff but have now stepped into an arena where that thing you once ran from is now ever present and twisting and morphing and asking you for more.. well, you will #notdrowningwaving #veganbusinessowner #vegancatering

08.01.2022 By the way, this is what Mac has eaten for the past 4 years and has literally perfect (a direct quote by my somewhat surprised non-vegan but awesome vet ) blood work, a beautiful coat, teeth, vitality, health. He’s 95% plant based with a non-vegan dental chew daily and not adverse to nicking bones from the neighbours dog If the worlds people and dogs were 90-95% plant based we’d make a massive impact on reducing our individual and collective carbon (and methane ) fo...otprint. Theres never been more compelling reasons to make the switch. Start with one meal a week if you are nervous of change and build steadily from there. I know from experience you’ll be so glad you did

08.01.2022 Saturday Stew Something I like to do after I go to the Farmers Market on a Saturday or Sunday is take the older veggies, legumes and sauces from the fridge and use them up for my own meals on the spot. No guests in this weekend so I had lots of time to do a lovely long shop and chat to people like @melwells90 and stall holders who I’ve come to know over the past year... As I was putting my bounty away I chopped the ends of asparagus off, the bit of the leek in between th...e good bit and the really tough bit , trimmed the main stalk off the broccoli, chopped one of the outer leaves of red cabbage, stripped the handful of kale I had picked from the garden a couple of days ago but not eaten and then added (or nibbled on) a bunch of other veggies (and chickpeas) while I did my thing... 07.01.2022 Batch Cooking. Leftovers. Kinda same same in my pragmatic mind It may come down to intention vs chance. Either way you’ve started with a larger amount of something you put effort into and end up enjoying the fruits (or legumes ) of your labours later... and giving yourself an inner high five for your 10 minute dinner My 12 night stay guests went out for dins last night so I got to kick back and enjoy this more complex version of my Quick Beans (yup, it’s in my mea...l planner and midlife nutrition guide .... you can get ya self a copy via the link in my bio if ya like!) The quick beans recipe is literally 15 minutes from start to on the table... and it’s rich, nutrient dense and so satisfying. 07.01.2022 My beautiful guests of the past 12 nights leave tomorrow I wanted to make them something rich and indulgent for dessert, yet also with the freshness of organic blueberries... This is a variation of the simple yet delectable recipe by @bosh.tv and it went down a treat (literally ) ... The request had been for curry tonight and so I did a favourite here.. the sweet potato, kale and coconut which can be found both on the website and in the meal planner... I added home cooked chick peas tonight also for a complete protein profile with the addition of beautiful organic brown rice from @theseedysister Nat and Colin, my guests, presented me with the sweetest gift at dinner.. a beautiful guest book with the first entry already inscribed.. yeah I had a teary moment The thoughtfulness of my guests never fails to surprise and delight me... from fixing little things for me, messaging to see if o need anything picked up at the shops, showing my tech things, sharing tricks, tips...well all sorts of things! No wonder I love what i do! My guests are as special and unique as this funny little vegan bed and breakfast is Nat and Colin, I know you follow me now... 05.01.2022 Waaay back in 2016 when we were free to roam the world (seems like a half remembered dream now eh ) I had the utter pleasure of staying in the most gorgeous boutique guesthouse Villa Gracieuse in the beautiful Pyrenean town of Bagnères-de-Luchon. Vic and Geoff are two of the kindest, funniest hosts you’d ever hope to stay with and they made both my pre- (and mid!) Pyrenees run unforgettable. Vic even made me beautiful vegan dinners ... Check their Instagram and FB pages out Honestly I feel like I’m watching a version of a classic Brit comedy most the time I know I’ll get back there one day... they, the villa and Luchon are in my heart for ever. If you head to France, winter or summer... it’s one place I’d highly recommend!!! Vic and Geoff, your placing me in your favourite guests list over 10 years really touched my heart. And I am in some pretty illustrious company You’re certainly my favourite hosts ever!
01.01.2022 Took a break from cooking and went for a mid afternoon wander around the property after seeing the little palomino pony next door galloping around and looking mega cute she didn’t want to come over for a hello though so Love looking at the house nestled into the lawns and gardens through the trees here.... I some times miss my beautiful native garden that @paulsampsonlandscapes did for me a 3 years before I left the farm... I wonder what it looks like now. It was so... special with all the natural flow of rock work and levels... but here is a different garden altogether and it is already lovely and will continue to evolve and grow over the years...just like us hey Change lights me up... plans, dreams, creating, envisioning... things morphing as life and circumstance presents new challenges and opportunities. How can we ever be bored if we are paying attention in life! We cannot! Life is never boring! If it seems so it’s only because we are asleep at the wheel.
