This was a white chocolate mud cake with raspberry jam and white chocolate ganache filling, coated in raspberry swiss meringue buttercream and topped with soft florals. 10.01.2022 Earlier this month I asked, and you guys sure answered: buttercream is your preferred icing of choice! Which I'm pretty excited to hear, and I'll tell you why. Buttercream is all I use! I don't use fondant to cover* cakes. Ever. While I admire what it can do, I've never been a fan of what it tastes like and I've found over the years that most people feel the same. ... In my mind, there's just no comparison between the taste of buttercream and the taste of fondant. And what's the point of a cake that looks amazing but tastes just okay? * Sometimes I use fondant for small details or toppers. Only sometimes.

07.01.2022 Probably one of my favourite cakes ever. This was a delicate vanilla cake filled with dulce de leche that soaked into the cake, coated in dulce de leche swiss meringue buttercream. This one got rave reviews!

I just finished decorating a big batch of bubblegum cupcakes inspired by unicorn poop, which we all know is colourful and sparkly and in this case, delicious. I'll try and snap them before they go out to a group of excited 4 year olds tomorrow.
