18.01.2022 We came, we saw, we conquered this Caesar salad with Smoked Streaky Bacon! Recipe below. INGREDIENTS 5-8 rashers of British Smoked Streaky Bacon... 1 tablespoon olive oil 20g butter 1 garlic clove, crushed 3 slices white crusty bread, crusts removed, cut into 1cm cubes 1 cos lettuce, washed, dried, torn 40g shaved parmesan Dressing 1 egg 80ml (1/3 cup) extra virgin olive oil 2 tablespoons red wine vinegar 1 teaspoon Dijon mustard 2 drained anchovy fillets METHOD 1. Heat 1 teaspoon of oil in a large non-stick frying pan over medium-high heat. Add the bacon and cook, stirring, for 2-3 minutes or until golden. Use a slotted spoon to transfer to a plate lined with paper towel. 2. Reduce the heat to medium. Heat the butter and remaining olive oil in the pan. Add the garlic and bread and cook, stirring occasionally, for 4 minutes or until golden. Transfer to a plate lined with paper towel. 3. To make the dressing, place the egg in a small saucepan of cold water. Bring to the boil over high heat. Cook for 1 minute. Drain. Cool under cold running water. Crack the egg into a bowl. Use a teaspoon to scoop any remaining egg from the shell into the bowl. Place the egg, oil, vinegar, mustard and anchovy fillets in the bowl of a food processor and process until combined. Season with salt and pepper. 4. Combine the bacon, bread mixture, lettuce and parmesan in a large serving bowl. Drizzle over the dressing to serve. See more

16.01.2022 Come on... change it up this week with some Asian inspired slaw. INGREDIENTS (serves 8) 8 British Sausage Co. Thin Sausages of your Choice (We recommend Pork or Cumberland) 8 Bread rolls... Vegetable oil 2 Spring onions, sliced thinly 1/4 purple cabbage 1 large carrot 1 green apple 1/4 cup chopped mint 1/4 cup chopped coriander 1 tablespoon of toasted sesame seeds Red chilli slices (optional) 1 teaspoon of sesame oil 1 tablespoon of fish sauce 2 tablespoons of lime juice 1 tablespoon of sweet chilli sauce or 1 tablespoon of sugar 1 tablespoon of olive oil 1 teaspoon of grated ginger (optional) METHOD 1. Cook your sausages on the BBQ low and slow over a medium heat. 2. Finely shred cabbage (approx 4 cups worth). Slice capsicum and apple and slice into thin matchsticks. Peel carrot and slice into thin matchsticks. Place all slaw ingredients into a large bowl. 2. Mix sesame oil, fish sauce, lime juice, sweet chilli sauce (or sugar), olive oil and giner together in a small bowl. Stir well. 3. Pour dressing over slaw and toss well. 4. Cut rolls down the middle, add a small amount of slaw, then add cooked sausage and then top with more slaw. For the brave add some fresh cut chilli!

14.01.2022 Running out of ideas and supplies for a quick and easy dinner tonight? A delicious one pot dinner only requires a few fridge and pantry staples or even left overs. To re-create gently fry a diced onion, chopped carrot, capsicum and sausages. Add in a can of beans, tomatoes and let simmer on a low heat for 20 mins. Then top with some fresh herbs. No beans? Substitute with potatoes . No capsicum? Substitute with zucchini? No herbs? Top with fresh spinach. You mix and match. We would love to see your creations. Inspired by @annasfamilykitchen

Thin Sausages of your Choice 8 Bread rolls... 2 Spring onions 2 Avocados 1 cup of cooked corn kernels 2 large tomatoes 1/4 cup of chopped coriander 1 lime or lemon Salt and pepper to taste Red chilli slices (optional) METHOD 1. Cook your sausages on the BBQ low and slow over a medium heat. 2. While your sausages are cooking, create your salsa. 3. Finely slice spring onions, dice avocado and tomatoes. Add to a bowl along with corn and coriander. Add in the juice of lime or lemon, toss ingredients and season to taste. 4. Cut rolls down the middle and layer your ingredients to you liking. Our recommendation is to add sausage first then add salsa on top. For the brave add some chopped chilli!
