19.01.2022 #Repost @thebbqzone Carne asada Fajitas!! This beautiful Wagyu Flat Iron Steak was the perfect match for this awesome dish. I started by marinading the steak for a few hours in a mixture of Coriander (cilantro) , garlic, cumin, salt/pepper, lime (zest & juice), olive oil, soy sauce and brown sugar. I fired up the Jumbo Joe and browned off some Capsicums (peppers) and onions in the griddle. Once done I sat them aside and got my Grillgrates nice and hot. I removed... the steak from the marinade and allowed it to come up to room temp before cooking it on the grill grates to a perfect medium/rare. The tortillas were also given some sear marks and all rested while I whipped up a quick Pico de gallo. It was all served out of the griddle and WOW was is it delicious!!! With hardly any effort or time we were eating one of the most tasty lunches I’ve ever made. Have a flick through all the photos to check it all out!! . . .
