02.01.2022 On Sunday 13th September we hosted Secret Foodies for a vibrant long lunch in our tropical oasis. Guests were encouraged to embrace the season and wear a pop of colour and on arrival were greeted with the perfect drink to kick off the festivities, Riot Wine Co’s brand new Rosé Spritz in a can. The Butler team treated guests to an array of seasonal dishes influenced by Spanish and Portuguese cuisine. A few highlights from our curated menu were the Yellowfin tuna tostada with ...peanut salsa macha, edamame and guajillo oil and the mouthwatering Adobo rubbed Wagyu rump with a cap 6+7 score served with chipotle morita, jamaica and sweet red onion escabeche. Following lunch, the guests were able to hear from our Head Chef, Amber Doig, about the inspiration behind her cooking and The Butler’s flavourful menu. 01.01.2022 Melbourne Cup 2020...what a day! Guests sipped on Champagne G.H.MUMM and enjoyed an Ibero-American banquet curated especially by our Head Chef, Amber Doig. With large screen TV’s showing the race, sweepstakes, best dressed prizes and one of the best views in Sydney, it was a fabulous day with great vibes all round.
