22.01.2022 One of my all time favourite winter dinners... slow #braised Red Wine Beef Cheek. I have just recently started doing this cracker dish in my #hawkinspressurecooker aptly named 'The Big Boy' and wowee, the result is spectacular. Think gallons of dry red wine, caramelised garlic & onion, bay leaves, rosemary, thyme, seeded mustard, cherry tomatoes and hours of slow cooking... or in the case of the Big Boy only about 45minutes!... Winner! See more

22.01.2022 Who is The Cocky's Wife you say? Well she hates being in front of the camera and is usually too covered in food prep mess for a decent profile shot, so here is a rarity! A few years back serving up @duck_creek_races, pre-baby (and pre-baby body!) sporting an 'on-trend' fringe back when I had time for an uninterrupted hair cut and color. Oh the luxury of that thought!... Over the years many people have asked me how I learnt to cook and my answer is this... I love eating good food! No formal training here whatsoever! Ironically I hated 'Home Economics' at school and for 10 years I followed a career in IT consulting working in everything from database programming to website management. And the true irony is that had I not done my degree in IT, I would never have ended up on farm, and turned my hand to catering. Everything happens for a reason! See more

21.01.2022 First the first year ever I have my own home grown Tahitian #lime! And I must say it is quite exciting that my mint crop is looking spot on for summer too... bring on long, lazy afternoons in the hammock with a giant Mojito in hand! Haha. I wish.



19.01.2022 Sometimes the best dishes are using up the left overs! This little number was pulled together using one saucepan of boiling water and no other dishes! Soft boiled some quail eggs in water, removed and peeled. Rough chopped and blanched some Brussels that had been banging around the fridge for sometime. Set aside in a large bowl.... Pop in the mini potato gnocchi and wait for them to float. In the brussel bowl I added some grated parmy, Lemon zest, mint and a little juice, good glug of olive oil, cracked pepper. Just before gnocchi are done toss in the baby peas. Spoon the gnocchi and peas into the brussel bowl with a little pasta water, toss and serve topped with the quail egg! Surprisingly tasty!

13.01.2022 These little beauties may have taken forever to grow but damn they are tasty. On the dinner menu for our guests last week, our #heirloomvegetables grown from @thediggersclub seeds including four colors of carrots, tri colored silver beet and baby leeks. Of course accompanied by Clive Robb's local lamb leg, some silky pan gravy and home made mint sauce.... 12.01.2022 A little flash back to our first gorgeous onsite wedding @callubristation for the beautiful @beachtobush and Harry Holmes. Of course I forgot to snap the entree of Sundried Tomato and Basil Arancini with Rocket Salad, but here is a sneak peek at the mains! Slow roasted Lamb Rump, Lemon scented Potatoes with Black Olives and Cherry Tom's, new season Asparagus and a delicious pan jus.... We also gave our sous vide machine its first workout with a mouth watering eye fillet of local Beef, sitting on top of a potato grain with a master stock jus. And who doesn't love #tiramisu to finish! Happy post wedding bliss love birds!

11.01.2022 The Cocky and I have been visiting the same restaurant for our wedding anniversary for many years... A few years ago @kazukisrestaurant moved from Daylesford to Carlton and we were ecstatic to finally get back there for an incredible 7 course lunch that was impeccable! Perfectly balanced, exquisitely crafted dishes and a well thought through menu that left us perfectly satisfied.... And we were delighted to see our favorite Nori Butter with fresh baked rolls still on the menu along with a few other faves. Pop over to our stories for a sneak peek at the other beautiful courses. 08.01.2022 For a few months now we have been making our own bread and trialling lots of different flours and flavours! Our #sourdough mother yeast has matured nicely and absolutely delivers the goods every time! We always have more than enough for our weekly bake so please shout out if you would like some of our #Spelt and #wholemeal mother yeast to give your own batch a whirl! t takes a little practise but is so rewarding once mastered. My most successful gamble to date was defin...itely using our sour dough for pizza bases. For the main dough I used a fabulous 00 flour from @sarahjanefinefoods and Furnery's Flour Mills in Dubbo. Hit us up with your favourite bread suggestions... we may have an Italian chef en route to Callubri Station who has worked in pastry... just sayin ; ) See more

It has been really exciting to breath new life into all these fabulous pieces from our original cafe, and showcase them in our new Shearer's Quarters wedding venue. After months of work we have finally finished hand sanding all our beautiful vintage #Bentwood chairs, re-surfacing our cafe tables with new timber, staining in a lux Black Japan and lacquering with my favourite hard wearing Marine Varnish!... They have come up a treat and we can't wait to serve you all from October onwards! See more
