10.01.2022 It is almost certain that coffee drinking originated in Ethiopia and that the Arabica strain of coffee plants was cultivated from around 575 AD! One popular story about the discovery of coffee is that of a goatherder and his herd. One day he noticed his goats were friskier that usual after they had been grazing on some bushes with red berries. After awhile, when the goats continued to be more lively than usual and they didnt show any negative affects, he decided to try them himself. Soon he too was affected, becoming alert, awake and full of energy, so he took the berries to the local abbot. The abbot made an infusion to test the properties of the berries himself. Soon the whole community was drinking the new drink to keep them awake through late night prayers (taken from The Coffee Book by Rosemary Moon).

04.01.2022 Coffee Cosies are....................

04.01.2022 I made this Rich Italian Chocolate cake for a friends birthday party and it went down so well! The coffee and brandy give it its lovely deep flavour. Try it! Rich Italian Chocolate cake (gluten free) 225gr hazelnuts or walnuts... 225gr good-quality dark chocolate (70% cocoa), chopped 225gr blanched almonds 100ml brandy 2tbs prepared black coffee 1tsp ground cinnamon 2tbs milk 220gr caster sugar 5 lge eggs, separated at room temp. Mascarpone to serve Preheat oven to 180deg C. Grease and flour or line a 25cm springform pan. Place hazelnuts or walnuts on a baking tray and roast for 5 mins, then leave to cool. Pulse the chocolate and almonds in a food processor until the consistency of breadcrumbs. Transfer to a large metal bowl and stir in the brandy, coffee, cinnamon, milk and half the sugar. Add yolks, one at a time and continue, to mix, blending well. Rub roasted nits to remove skins, and then whiz in the processor until slightly coarser than almonds and chocolate. Add to cake mixture and mix well. In a clean bowl, whisk eggwhites using electric beaters until stiff. Add remaining castor sugar and continue to whisk until shiny. Gradually fold into the chocolate mixture with a large metal spoon, using a cutting movement so that you dont knock too much ait out of the whites. Gently spoon the mixture into the cake pan and bake in the centre of the oven for 1 hour. The cake is ready when a skewer inserted into the centre comes out clean. Unclip the cake; turn out onto a wire rack and leave to cool. Slice and serve with a dollop of mascarpone. (Delicious 2008)
