We make our very own plant-based yoghurt, using a blend of oats, coconut and rice milks. Oats for the 'sweet n creamy', rice for its 'subtly sweet' but neutral' and coconut for the 'indulgence n creaminess'. ... All three ingredients complement each other to create uniquely delicious, thick ‘n’ creamy plant yoghurt. The first of its kind.

23.01.2022 It's the silly season... so why not indulge a little bit more? We've been drooling over this recipe using our Plant Fudge yoghurt, and can't wait to try it ourselves. See recipe below. Espresso Yoghurt Cake with Fudge Labneh Swirl Serves 8... Alrighty, you'll need... 1 tub The Collective Plant Yoghurt - Fudge 1 1/2 cups almond meal 1/3 cup coconut flour 1/3 cup coconut sugar 3 tbsp cornflour 1 tbsp ground flaxseed 1 1/2 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt cup coconut oil, melted 3/4 cup The Collective Plant Yoghurt - Natural 1/3 cup maple syrup 1 tbsp espresso powder dissolved in 1 tbsp water 1 tsp apple cider vinegar 1 tsp vanilla extract Now all you need to do is... 1.In a mesh sieve lined with muslin, strain Fudge yoghurt overnight. Discard liquid and reserve the thickened yoghurt - this is your fudge labneh. 2. Preheat oven to 180C. Grease a 20cm cake tin. 3. To make the cake, combine all dry ingredients in a bowl. Add coconut oil and mix to coat. 4. Add remaining ingredients and mix to combine. Pour of the mixture into your prepared tin. Dollop spoonfuls of the labneh over top - make sure not to add too much, or the cake will be too moist. Gently swirl through with a knife. You can reserve some for spreading over the finished cake. 5. Dollop remaining cake batter over and smooth the top. Bake at 180C 20 minutes, then reduce heat to 160C and cook for an additional 30 minutes, until browned on top. The cake will be fudgey and will set as it cools. Serve warm or chilled, with reserved fudge labneh and maple syrup.

We love to include anything from carrots and celery, to fruit and crackers, but know the key ingredient is a delicious dip. See the recipe below for a yummy dip *drool* Alrighty, you'll need... 1 cup The Collective Just Greek Yoghurt... 1/4 teaspoon garlic powder (or fresh/crushed garlic) 1/4 teaspoon onion powder 1/4 teaspoon salt 1 teaspoon thyme (we use dry) 1 teaspoon olive oil 1 teaspoon lime juice Now all you need to do is... 1. Whisk the cup of Just Greek yoghurt up 2. Now add the garlic (powder, crushed or fresh), onion powder, and thyme to the yogurt. 3. Then you can add salt to taste along with a pinch of pepper. Add the olive oil and lime juice, then whisk all the ingredients together until they become creamy. 4. 13.01.2022 Kick-start your weekend with our super healthy overnight oats, made with our Blueberry Kefir Pourable. Recipe below *grin* Alrighty, youll need... 1 cup of The Collective Blueberry Kefir 1/2 cup unsweetened almond milk 1 cup fresh blueberries 1 cup rolled oats 1 tbsp black chia seeds 2 tsp ground cinnamon 1 tsp raw coconut sugar 1 tbsp sliced almonds 1/4 coconut flakes 1 pinch of salt Toppings 10 blueberries 1 tbsp coconut flakes 1 tbsp sliced almonds Now you need to 1.Add the blueberries to boiling water for 60 seconds. Drain water carefully, then use a fork to gently mash the blueberries 2.Add all dry ingredients to a mixing bowl and mix evenly 3.Add Kefir, almond milk and blueberries. Use a wooden spoon to gently fold the ingredients together 4.Pour mix evenly into two glass jars. 12.01.2022 How about this for an Easter showstopper!? We cant help but drool over this Straight Up lemon cake. If youre up for the challenge, check out the recipe below. Alrighty, youll need: For the cake (makes 3 layers) - 6 lemons, zest finely grated... -750g Straight Up plain yoghurt - 750ml vegetable oil - 6 eggs - 6 tbsp lemon juice - 750g caster sugar - 1 tsp salt - 825g self-raising flour For the icing - 60g butter, softened - 380g icing sugar - 1 tsp vanilla extract - Lots of mini eggs for decorating! Now you just need to: 1. Preheat oven to 180 C / Gas 4. Grease and flour a 23cm cake tin. 2. Place lemon zest into a bowl. Add the oil, eggs, sugar and beat until thick n well blended. 3. Add the salt, Straight Up yoghurt and lemon juice. Beat again briefly to mix well. Fold in the flour. 4. Pour the batter into the prepared tin and bake for 30-40 minutes. When ready, a skewer will come out clean when inserted into the centre. It will be slightly moist. 5. Leave to cool in the tin for 10 minutes, then carefully turn out onto a cooling rack. Repeat 2 more times for your other layers. For the icing (top tip: use a mixer to make it extra light and fluffy). 6. Mix in butter and cream cheese together. 7. Add sugar, 1/2 a cup at a time. After each cup has been incorporated, turn the mixer onto the highest speed setting and for about 10 seconds to lighten the frosting. 8. Add in vanilla and beat until well-blended, light and fluffy. 9. Spread a thin layer of icing between each cake layer and stack 10. 12.01.2022 This homemade pizza base is the bees knees, and is made with our Straight Up Unsweetened yoghurt to create a delicious golden base, that will have you going back for seconds... and probably thirds *wink*. See below for the recipe: Alrighty, you’ll need... 1/2 cup self-raising flour 1 cup The Collective Straight Up Yoghurt 1/2 tsp garlic powder 1/2 tsp salt Extra flour for kneading Your favourite pizza toppings. Now you just need to 1. Preheat oven to 220 degrees 2. Place all dough ingredients in a mixing bowl and combine with a wooden spoon. Turn dough out onto a lightly dusted work surface and knead for about 5 minutes, adding more flour as needed to prevent it being too sticky. 3. flatten out dough to the desired thickness using your hands or a rolling pin and transfer to a lightly floured pizza tray. Top with your choice of sauce and other toppings for cooking and place in the oven for 10-12 minutes until edges are golden brown. 4. Remove from oven and top with fresh ingredients and enjoy straight away.

Strawberry n Pistachio Eton Mess (makes 4) Alrighty, youll need: - 1 cup natural sweetener (Natvia)... - 5 egg white (use large eggs) - 1 tsp white vinegar - 2 tbsp edible rose petals - 1 tbsp sifted cornflour - 1.5 cups The Collective Straight Up yoghurt - 6 large strawberries, halved - 1/4 cup crushed pistachios - 1 tbsp edible dried rose petals - 8 small mint leaves - 1/2 cup raspberries Now you just need to: - pre-heat your oven to 120degs. - line baking pan with baking paper - add egg whites and beat on high for approx. 8 mins, until you get firm peaks - whisk eggs on high and add natural sweetener, a tbsp at a time and whisk for approx. 30 secs before adding another tbsp - whisk for further 5 mins until peaks are firm - use metal spoon and fold through edible rose petals, vinegar and cornflour - spread meringue mixture onto baking paper and bake for 60mins until meringue is firm and dry - turn off oven and let meringue cool in oven with door ajar for approx. 60 mins - microwave raspberries in microwavable container for 45secs and remove and stir until liquid is formed. 05.01.2022 Introducing 'Plant' a dairy-free worth flipping out over, and the best tasting yoghurt grown on earth! A thick, creamy, and totally dreamy blend of oats, coconut and rice. All four flavours; natural, fudge, passionfruit and boysenberry are low sugar, soy free, nut free, probiotic, vegan friendly and are ridiculously tasty. To top things off, this new range comes in recycled plastic packaging (rPET) and can be completely recycled *grin*.

04.01.2022 Fancy a gut-lovin side dish to end your week? Give this probiotic-packed recipe a whirl - roasted carrots with miso kefir dressing. *drool* 1 large bunch of heirloom carrots 1 tablespoon olive oil... 1 tablespoon dried tarragon 3 tablespoons The Collective Natural Kefir 2 tablespoons peanut butter 1 tablespoon miso paste 1 tablespoon honey 1 tablespoon apple cider vinegar 2 tablespoons pistachios, roughly chopped 2 tablespoons parsley, roughly chopped Salt and pepper 1. Pre-heat oven to 180C. Trim and wash a bunch of heirloom carrots and pop on a roasting tray. 2. Drizzle with olive oil and sprinkle over with tarragon. Give the tray few shakes and roast in a 180C oven for 20 minutes. 3. To make the dressing, in a bowl, whisk together The Collective Natural Kefir, peanut butter, miso paste, honey, and apple cider vinegar until smooth. 4. Serve carrots on a platter, season with salt and pepper. 04.01.2022 Our Straight Up is super versatile and can be used to make anything from dips and marinades, to this delicious Lemon and Elderflower cake *drool*. Recipe below: Straight Up Lemon and Elderflower Cake Alrighty, youll need:... - oil, for greasing - 6 medium eggs - 100g The Collective Straight Up - 50ml milk - 450g softened butter - 450g golden caster sugar - 450g self-raising flour - finely grated zest + juice of 1 lemon - 3 tbsp elderflower cordial For the icing: - 250g softened butter - 300g full fat cream cheese - 700g icing sugar - finely grated zest of 1 lemon - fresh flowers to decorate Now you just need to: 1. Heat oven to 160C/140C fan/gas 3. Grease and line the base and sides of 3 x 20cm cake tins with baking parchment. In a jug, whisk the eggs, yogurt and milk. Beat the butter and sugar together in a large bowl, using an electric hand whisk. When you have a light and fluffy mixture, add the flour, the liquid in the jug and the lemon zest. Mix again until smooth. Divide the cake mixture between the tins, level the surfaces and bake for 40 mins. 2. Mix the lemon juice and elderflower cordial. When the cakes are cooked, poke all over the surface with a cocktail stick then spoon the lemon and elderflower syrup over the cakes. Leave to cool in the tins. Once cool, you can wrap in cling film and keep for 3 days before icing. 3. To make the icing, beat the butter until smooth with an electric hand whisk. Add half the icing sugar, use a spatula to mash the mixture together (this will help to prevent an icing sugar cloud) then whisk again. Add the remaining icing sugar, cream cheese and lemon zest, mash again, then whisk again until smooth. 4. Stack the cakes on a cake stand with plenty of icing between each layer. Pile most of the remaining icing on top, then use a palette knife to spread it across the top and down the sides, covering the cake in swirls (dont worry about it looking too perfect). 01.01.2022 Looking for a drool-worthy recipe to try this weekend? Heres a middle Eastern classic for you to try...featuring our Straight Up *drool* Straight Up Baba Ghanoush Serves 6... Alrighty, youll need: - 300g Straight Up yoghurt - 4 medium - large eggplants - 30g extra virgin olive oil, plus more for drizzlin - Pinch of smoked paprika - Squeeze of lemon juice, to taste - Salt & pepper Now you just need to: 1. Preheat the oven to 220C, line a baking tray with foil. 2. Slice the eggplant to 1cm thick rounds and lay out on a baking tray. Drizzle over some oil, salt and pepper. 3. Roast for 25 mins until the eggplant slices are soft and slightly golden. 4. Once out of the oven, remove the eggplant skin. 5. Add the eggplant, yoghurt, extra virgin olive oil, paprika and seasoning to a bowl or blender and blitz until the desired texture. 6. Squeeze in the lemon juice and adjust to your taste.
