21.01.2022 Penguin Random House is publishing a new cookbook by Yotam Ottolenghi in September, written alongside Ixta Belfrage: Ottolenghi Flavour. Publishing on 3rd September under Ebury, the deal, for world all language rights excluding the US, was done by Lizzy Gray, publishing director at Ebury Press and Felicity Rubinstein, Lutyens & Rubinstein Agency, and in the US and Canada in association with Kim Witherspoon at Inkwell to Aaron Wehner, executive vice- president and publisher, ...Penguin Random House US. "This is Yotam at his pioneering best, said Gray, "with over 100 inventive vegetable-based recipes including advice on how to create amazing flavour in all your cooking." Flavour follows the restaurateur’s vegetable series Plenty, which according to PRH has shifted over two million copies, and Simple, his most recent book, that it reports has sold over 1.2 million copies worldwide. In the new cookbook, Ottolenghi and Belfrage introduce "three principles that create great flavour" and offer "innovative vegetable dishes that deliver new ingredient combinations and techniques to excite and inspire". In the mix are simple recipes for weeknights, low-effort high-impact dishes, and standout meals, according to the book’s description, complemented by colourful photography for nearly every recipe. The book is broken into three sections: firstly, Process, which explains the cooking methods that can "elevate vegetables to great heights"; Pairing, which identifies four pairings that are "fundamental to great flavour"; and Produce, offering "impactful vegetables that do the work for you". Recipes include Aubergine Dumplings alla Parmigiana, Celeriac and Goat’s Cheese ‘Tacos’, Spicy Mushroom Lasagne, and Romano Pepper Schnitzel. The author will tour the UK and Ireland this September to promote the book. The events, run by Penguin Live, will feature Ottolenghi discussing his life, career, and the limitless potential of vegetables. Stops on the tour are London, Bristol, Nottingham, Edinburgh, York, Kingston, Salford, Dublin and Oxford. Tickets go on sale on Friday (28th February) at penguin.co.uk/events.
