22.01.2022 Our winemaker in full focus mode during the 2020 vintage. Belinda is measuring the Baumé (boh-may), a measure of the density of the fermenting wine based on the amount of sugar, giving an indication of potential alcohol. Two of the most important monitoring aspects during fermentation is measuring the Baumé & tasting the ferment, both help winemakers make timely decisions such as when to aerate, or press off skins.
