10.01.2022 RECIPE Raw Lemon Tart Lemon tart has nostalgia written all over it for me. Growing up with an English mum, who knew her way around some shortcrust pastry and a backyard lemon tree that seemed to only have two default settings, stark naked and lemonless or falling over dripping with juicy fruit - I think it was lemon tart fate that this eggy, creamy, sugary treat featured heavily in my childhood and wasn’t it yum. ... Now before you get too ahead of yourself, if you’re after that kind of recipe, I’ll stop you right there. Don’t get me wrong, there’s most definitely a time and a place for that citrusy delight - but I don’t think I’m the right person to lead you down that decadent garden path. Your best bet is to hit up my mum (she’s real friendly) or Donna Hay, or better yet Julia Child. This is my tart take. Filled with nostalgia, but lighter and fresher; a naughty but nice version. 05.01.2022 Our footprints moving forward I don’t know about you, but I've been overwhelmed senselessly by the state of the world lately. I just don’t know if our sensitive makeups are wired to cope with the layers, and the intensity of what has been going on. It’s hard not to feel despondent, and well just a bit paralysed by it all. It’s almost easier to disengage at times - call it self preservation. ... But with so much out of our control, I guess even if the optimism has felt buried a little deeper than normal, I think I’ve been clinging to this hope of us all having the capacity to shape the new ‘normal’, clinging to the aspects that are within our control. So for me this year, Plastic Free July, is especially important, because it's a catalyst to remind us about our ability to set a new precedence for how we do life. Obviously plastic is just one element in the huge environmental piece that our world is facing, but knowledge is power, and people power will change the world. Over the next month I’ll be sharing a whole heap of my simple tips and tricks, to take the complication out of being an environmental champion, and can’t wait for you to share all yours too. It wasn't until I met the lovely Kate @maydetea years ago, who passionately bought it to my attention, that this had even occurred to me! ... Unfortunately teabags were created with convenience not your health in mind. The bags are often produced with glue adhesives, bleach and chemicals, that inevitably leech into your tea.
