19.01.2022 Venetian Knockoff . For the new menu we wanted to do more than just use Japanese ingredients in our cocktails. We wanted to mimic their respect of methodology. The fundamental quality of most Japanese cuisine and beverage is simple ingredients/complicated process. ... Using this mantra, we decided to recreate one of Venice’s best exports - The Aperol Spritz - without actually using Aperol or Prosecco. Each serve consists of muddling Siberian ginseng, coriander seeds, fennel and a few other little secrets in the shaker, shaking with vodka and house orange/ rhubarb wine syrup and straining into a glittered wine glass. The result is simply a bright, citrusy and refreshing spritz, yet the process is what makes this cocktail truly one of a kind.
