It is simple, easy and delicious - something the kids could even whip up! . .... . . Avocado Tomato Salad 1/4 cup of extra-virgin olive oil 1/2 cup of lime juice 3 avocados, cubed 1 punnet of cherry tomatoes, halved 1 small cucumber, sliced 1/3 cup of corn Add avocados, cherry tomatoes, cucumber and corn to bowl. Mix oil and lime juice in separate cup - add to bowl and toss to finish. *TIP: Add a drizzle of balsamic on top for some extra flavour.
