24.01.2022 Round the world Wednesday This week we are cooking Greek and what better than a greens filled spanakopita a delicious combination of greens, pastry and cheese Enjoy! And please let us know if you have any cuisines we would like to cook next week ... Ingredients: 500g greens (we used kale, spinach, coriander and chives, just use what you have in your fridge) 3 gloves of garlic 1 leek (can substitute with onion) 100ml cream 150g ricotta Sprinkle of feta (optional) 1 lemon 10x sheets filo pastry Smidge of butter Method: 1. Thinly slice the leek (white part) and garlic cloves and pan fry for 10 minutes until soft with some olive oil or butter 2. Roughly chop your greens and wash them in water. Pop them in a large pot for 3-4 minutes on a low heat with a splash of water until wilted. Drain and pop in a big bowl. 3. Mix the leek mixture with the green mixture. Add the ricotta, cream and feta if using. Zest the lemon and pop it in the mixture as well 4. Pop filo pastry sheets on a baking tray, on every second sheet brush with butter. After you’ve layered five sheets, pop the spinach mixture on top. Put another five sheets in, and brush the top with butter. 5. Pop in your oven for 20-30 minutes (until golden) at 180 degrees. 6. Dig in and enjoy!
