25.01.2022 Ohh YES Another ahmazing dinner here in my #experimentalkitchen Whole snapper with basil, mint, kaffir lime and ginger Roasted potatoes cherry tomatoes and #bakedgarlic ohhh yeah такой вот #полноценный #полезный #ужин Запечнный морской окунь с базиликом, мятой, листьями каффир лайма и имбирм; #запечнныйкартофель с томатами Черри и #печныйчеснок кому нужен #рецепт пишите в личку #recipe Wash your fish inside and out (no, not with soap ), pat dry with paper ...towel. Check any remaining scales...discard. Score the fish, make 3-5 incisions through the skin, sprinkle with salt and pepper. Finely chop #herbs (removing all stalks - they go in your soup) and ginger, add salt, pepper and 3 tbsp olive oil . Quantities (eye ball it, I had about 4 tbsp chopped basil, 3 tbsp mint, 2 tbsp ginger and about 6 kaffir lime leaves). Mix everything, then brush about about 3 tbsp of this herby mixture on one side of the fish, put this side onto the baking tray. Add 2-3 spoonfuls in the belly cavity, then brush the rest on top of your fish. Cook #fish for 20-30 minutes (depending on the size) at 190-200*C fan oven. I #bakedpotatoes from last nights dinner (which were already boiled, so I just threw them in the tray, sprayed with olive oil). I love oven roasted fennel...with a t...ouch of truffle oil if I’m lucky . But what about the rest of fennel bits (stalks and fronds)? These are so fragrant, delicious and versatile! Add fennel fronds in salads or sprinkle on soups, add to your charcuterie platter and gravad lax or scrambled eggs ;) Add stalks in stocks, soups or baked fish! This became one of my morning staples. It takes minutes to make yet it’s so filling and delicious. #recipe 1 cup of spinach, handful of fresh basil leaves, 2-3 eggs, 4-5 tbsp coconut milk (from the carton), salt and pepper to... taste. Blend until smooth, fry on a low! heat. Cover pan with a lid to ensure it’s cooked through. 17.01.2022 Sunday brunch Italian Shakshuka because I had some tomato sauce left from my last night’s pasta The sauce is rich and peppery, so cool creamy avocado balances this dish perfectly Шакшука с томатным соусом с красным вином и авокадо отличный #полноценныйзавтрак Sauce ingredients: (enough for pasta and shakshuka) 1 can of whole tomatoes, 2 tbsp tomato paste, 1 glass of chicken or beef stock (I used my beef/bone broth). 3 cloves of garlic, 2 shallots (or 1 med on...ion), 1 stalk of celery, 1 carrot, 1/3 glass of dry red wine (I used Montepulciano), basil, rosemary, salt, pepper, chilli (optional) 1.Stir fry finely chopped shallots, garlic, celery and carrot in olive oil until golden, add salt, pepper. 2. pour in wine and reduce slightly (2 mins). 3. Add in tomatoes (squish them with hands before they go into the pan) 4. Pour stock 5. Add a small sprig if rosemary 6. Taste and add 1/2-1 tsp of sugar to balance the acidity 7. Boil for another 30 mins-1 hour/reduce to desired consistency on low-medium heat, stirring occasionally, add freshly chopped basil in the end. The sauce takes time, so more you make it the better, you can store it in a jar for the other day (stores well in the fridge for up to 4 days). Can use this sauce with spaghetti meatballs, simple marinara, add to your zoodles, bake with chicken. 14.01.2022 Hi So in this self-isolation situation I am trying to create conscious recipes, saving and reusing all nutritious and delicious bits. Today I made shellfish oil infused with curry leaves, which turned out to be pretty great this oil can lift and enhance simple dishes, and you can add to any seafood pasta, drizzle on soup and crusted bread, cook delicious omelette drizzled with this fragrant oil It was my first attempt...But there is always room for improvement, so ...please send me some ideas and recipes people :) any tips? So in my usual experimental kitchen I fried 6 banana prawns in 3tbps ghee and 2 tbsp olive oil. Added 2 cloves of garlic (slightly crushed), 1/4 of medium onion, 2 tbsp curry leaves. Once prawns were cooked, I removed the meat and put all shells back in the oil. Added about 4 tbsp of oil and left on low-medium heat for about 20 mins, while stirring everything in the pan. Finally I strained the oil and left in the fridge to cool. I have to say that all the fragrant aromas of curry leaves and grilled shellfish already made my day. 14.01.2022 Happy Saturday! How is everyone doing? I woke up today feeling very hungry...so had this amazing super quick one pan fry for breakfast. Sharing my recipe with you too! Fried eggs with spiralized zucchini, avocado and pickled red cabbage I guess the only guidance you need is for pickled cabbage as for everything else you throw in it a pan and have some coffee while you wait ... Pickled cabbage: slice thinly, add salt and pepper to taste, for 1/4 cabbage add 1 teaspoon mustard seeds, oil of your choice (I used avocado oil), can add chilli or other spices - it’s ready within minutes and you can keep this in the fridge for another 5 days easy. Meal planning is essential for such easy and super quick recipes. Pickled cabbage and spiralized courgettes are one of my favs and can be often found in my fridge pre-prepped. 10.01.2022 Let’s take a moment here and celebrate The Earth day In the end of the day...The Earth is what we all have in common W Berry What can we do take better care of our planet I have been making a shift towards more sustainable living, avoiding plastics where possible, reducing food waste, growing herbs on my balcony and creating/eating more vegetarian meals I have to be honest I used to waste a lot of food before... so 2020 was the year I decided to make the shift ... So what else I am doing (and you can) for the Earth Buying ugly or imperfect fruits and veggies - buy all these funny looking twisted carrots and sweet potatoes, almost too curvy pears and avocados, they are as nutritious! Creating recipes that would reduce food waste (reusing all nutritious and delicious bits of fruits and veggies that usually go to waste) Including more vegetarian dishes our diet Finally! it wouldn’t be me if I wouldn’t mention Oysters They are considered one of the most sustainable and ethical foods when it comes to the environment I said it before and I will say it again - these bivalves are sexy sustainable superfood from the ocean. 10.01.2022 Delicious fluffy Banana & almond meal pancakes #dairyfree #glutenfree You will need 1 ripe banana, 2 eggs, 1 cup almond meal, 1/3 tsp bicarb soda, pinch of salt, vanilla, 1/3 tsp cinnamon, olive oil. Important: separate egg yolks from egg whites In a blender (I used nutribullet) mix banana, 2 egg yolks, salt, bicarb soda, cinnamon, vanilla and olive oil. Add 2/3 cup of almond meal, mix until smooth In a separate bowl whip egg whites until soft peaks are formed... Add mixture from nutribullet to egg whites and mix carefully, until fully combined Add the rest of almond meal (1/3 cup) mix carefully Fry on a pan on a low! Heat Serve with fresh fruits...Enjoy просто офигенские банановые оладья. Воздушные, очень вкусные. Рецепт: 1 банан (начинающий темнеть), 2 яйца, 1 стакан молотого миндаля (именно не муки, молотый дат классную текстуру). 1/3 чл соды, шепотка соли, ваниль, 1/3 чл корицы, 1 сл оливкового масла. Важно: отделить желтки от белков. В блендере смешать до однородной массы - банан, 2 желтка, ваниль, соль, корица, оливковое масло. Добавить 2/3 стакана молотого миндаля и соду в блендер, смешать с остальными ингредиентами. В миске отдельно взбить белки до пиков Добавить в взбитые белки массу из блендера, аккуратно смешать, добавить оставшуюся 1/3 стакана молотого миндаля. Домешать до однородной массы Жарить на медленном огне! Важно! Кажется рецепт длинный, но это очень быстро и просто!!! И очень вкусно. 05.01.2022 While it’s raining again, I’ll just leave this here A throwback to our little escape to #Paradise @elementsofbyron last weekend After months of lockdown, a weekend away was just what doctor ordered.... 2 days of summer during winter and only 2 hours away #nailedit Beautiful Byron Bay - a tiny village (to my surprise) with great food and excellent restaurants... gorgeous views and of course endless beaches We had lots of food and plenty of wine (by the pool...and by the beach...and by the fire pit, in bed, in the bathtub ) early morning walks by the beaches and all the sea vitamins that we needed. #holiday #byronbay #vacation #weekendaway #inmyelement #seavitamin #sun #summer #hat #summerdress #australia #lovinglife
