Today is Good Friday for the worlds 300 million Orthodox Christians and one of the best-known Orthodox Easter traditions is the dying of red eggs to symbolise Christs suffering and resurrection. Lesser known is the practice of using all natural ingredients, such as red onion peels, to create the perfect egg dye. 23.01.2022 MOTHERS DAY DILEMMA? Cant think of what to buy Mum for Mothers Day? Well, allow us to propose an idea! How about a gourmet cheese platter with a dozen fresh Kailis Bros Leederville oysters accompanied by our stunning new STRAWBERRY BALSAMIC!? Our strawberry balsmamic has a wonderful, sweet and sour flavour profile and is simply bursting with the taste of fresh, Greek strawberries! Weve been working hard with Brika Head Chef George Tsimpidis to come up with some fantastic ...recipe ideas for all of our products. And so.here are Georges suggestions on how to use our strawberry balsamic on fresh oysters and a cheese platter. Be sure to spoil mum everyone! xo Fresh Oysters: Ingredients dozen Oysters 100gr chopped shallots 150gr chopped tomato (deseeded) 50gr Peloponnese EVOO 3gr sea salt 3gr lemon pepper 50ml strawberry balsamic vinegar Method Combine chopped shallots, chopped deseeded tomatoes, Peloponnese EVOO, sea salt and lemon pepper in a large mixing bowl. Serve oysters on a plate, topped with a spoonful of this mixture. Finally, drizzle with strawberry balsamic vinegar. Cheese Platter: Directions Take three or more cheese portions of your choice such as brie, camembert, chevre. Serve on a platter or wooden board alongside dried fruits and breadsticks. Drizzle cheeses liberally with strawberry balsamic vinegar. Pair with a delicate rose` or sweet white wine.

22.01.2022 SO, SELF-ISOLATING HAS SOME BENEFITS! One of the many benefits of the tough situation we all face is spending more time in our kitchens getting creative and doing the things we all love. You might have tried our wonderful, 100% all-natural donkey olives from Kiveri and enjoyed their clean, fresh, home-style flavour. Well, you should try marinating them! Because the olive flesh hasnt been cooked by the addition of caustic soda and other stabilising agents that are found in ...literally ALL supermarket green olives, these ones are just perfect for marinating and take on added flavours exceptionally well. Take a look at our latest home creation! The marinade that we used has a more eastern influence and we even incorporated the use of dried Afghan limes! Taste is such a personal thing so weve steered away from prescribing specific quantities of each ingredient and focused just on conveying the general flavour profile. INGREDIENTS Donkey olives A generous amount of our Small Batch EVOO from Kyriakos farm. Red or white wine vinegar Chopped fresh coriander Chopped garlic Sliced Lemon rind Diced white onion Cracked pepper Ground cumin Ground coriander seeds Chilli Flakes Cracked pepper The brew from dried Afghan limes (optional) METHOD Crush the olives and remove the pit. Add all the ingredients until you reach the desired flavour profile (Taste! Taste! Taste!). Regarding the Afghan limes, brew these in boiling water in a small saucepan or pot until you achieve a dark, tea-like colour. Remove the lime and continue to simmer and reduce so as to avoid adding to much liquid to the olives. Note: I was introduced to Afghan limes by my Afghan neighbour. Theyve got a wonderful aroma and an exotic, sour flavour that takes dishes to far flung places! Let the olives sit in the marinade overnight in the fridge, turning occasionally. P.S1 :Youll be able to find these wonderful olives loose at Kakulas Bros. in Northbridge, or, if youre after wholesale quantities just drop us a line... P.S.2. Im really embarrassed to admit this (particularly given The Food Philosopher tag), but for almost 38 years Ive been saying olive pip, instead of olive pit. I never even got the connection to pitted olives! Is any one else out there game enough to admit the same or am I just really unique/special? The importance of a good ejukayshen I suppose... 20.01.2022 YUMMY YEMISTA! Stuffing vegetables is a centuries-old Greek tradition and is a celebration of seasonality and freshness. And one of our absolute favourite Greek dishes has to be YEMISTA which are select vegetables stuffed with flavoured rice, and often minced meat. They represent everything good about the Mediterranean diet in a single dish and are (quite miraculously!) both light and refreshing as well as being perfectly filling. So... these are the yemista that we cooked to...day, complete with hollowed out potatoes! And the secret to the BEST yemista? Well, you simply must use the BEST Greek EVOO right through the cooking process. This is a dish that literally drinks up EVOO and a generous pour of our liquid gold as you plate this dish up will make all the difference... Top it with some crumbled feta, Eat it hot or cold... Have a sip of white or red, And let the tastes unfold... xoxoxo

20.01.2022 PAN FRIED FISH WITH SPECIAL BAKED POTATOES! With the winter weather finally here its time to crank up the oven and get roasting some hearty potatoes. But not just any old potatoes; were talking super-delicious Ruby Lous smothered in onions caramelised with our DELICIOUS The Food Philosopher Honey Balsamic and sprinkled with our organic mixed herbs from Mount Parnonas! The fish is a fresher-than-fresh whole snapper from where else but Kailis Bros Leederville. See our very si...mple recipe below! HOT TIP: Our honey and fig balsamics are just PERFECT for sauting and caramelising veges in a pan or baking dish. INGREDIENTS: 7-8 large potatoes cut into quarters large white onion, finely diced 30ml The Food Philosopher Honey Balsamic The Food Philosopher Organic Mixed Herbs The Food Philosopher Small Batch EVOO 1 cup chicken stock Mild Paprika 2 teaspoons Salt and Pepper Freshly squeezed lemon METHOD: Pre-heat the oven to 180C. Coat the potatoes in Honey Balsamic, EVOO, onions, herbs, paprika, salt and pepper. Pour in 1 cup of chicken stock and place in the oven. Cook until golden brown. Once out of the oven you may like to drizzle some extra honey balsamic and/or fresh lemon juice over the potatoes. HOT TIP: Place a few of the potatoes in the pan when pan frying the fish for a taste like no other!

17.01.2022 HARVEST TIME IN KORONI! All of Greece's olive farmers are entering their busiest time of the year as they head into the hectic harvesting period. We've had an interesting lead up at the farm in Koroni in 2020 with much of western Greece having braced for the impacts of 'Medicane' Super Storm Ianos, which lashed Greece in late September. Thankfully, our farm in Koroni was largely unaffected and the quality of fruit this year is absolutely exceptional. A BIG THANK YOU (!!!) to ...Kyriako and his Father Dionysios for all their hard work as yet another successful olive harvest is in full swing. And the good news for our customers is that with each new harvest we bring the FRESHEST of the fresh premium Greek EVOO direct to your kitchen tables! We know just how special our farm-direct, extra virgin olive oil from the ancient trees of Koroni is, but its always so nice when a member of the community shares our enthusiasm! Our oil is from just one farm and one variety of olive (premium Koroneiki) and therefore has an ultra-low acidity. This means it not only tastes fantastic but its super healthy for you too. 07.01.2022 IN THESE TRYING TIMES. Ive been thinking for a while about something to post in these trying times. Like many people with a young family and a small business the events of the past few weeks can seem quite overwhelming and the impact on our lives (and certainly our businesses!) will be profound Everyone seems to have their own 2 cents to contribute, adding to the commotion, angst and swirl. At the risk of doing exactly the same allow me to contribute just two very humble ...points of my own. Number 1: If youre in a position to do so, be sure to keep supporting the small businesses that contribute so much to the social fabric of our cities and towns. Many small businesses, and the families they support, are really going to hurt during 2020 and, if we can, we must support them! Number 2: Its so important that we stay well-informed during this trying period. 05.01.2022 BLUE-MING MARVELLOUS! Thanks for all your PMs and feedback on our post yesterday about our wonderfully rustic and all-natural red Easter eggs using red onion peels. Given the great response we thought wed update you on our latest earth-friendly creation - BLUE EGGS (!!) using none other than boiled red cabbage leaves! Again, the rustic finish looks so wholesome and authentic and winds the clock back to when we all lived simpler, slower lives (#covidlessons). We also think the blue and the floral finish of the eggs match perfectly with the elegance of our small-batch EVOO bottles which feature a digital recreation of a photo of one of the ancient trees that grow on Kyriakos groves in Koroni. 04.01.2022 A QUICK OLIVE UPDATE! Thank you for the many PMs and calls regarding our wonderfully rare Black Diamond olives! In response to your queries, please note the following important info about the worlds best olive... >BOX SIZE: The olives come in 10kg boxes, which comprise of 2 x 5kg vac sealed bags. As such, the minimum order is 1 x 5kg bag. >CARE INSTRUCTIONS: Once the bag is open it should be kept refrigerated (if it helps, based on my familys consumption rate 5kg shoul...d last you a few days max!). >PRICE: Price will be set upon customs clearance of the olives in late June, however, as always, we do our absolute best to keep prices low for all of our premium lines. >LOGISTICS: With regards to delivery, for private sales, the olives can be picked up free of charge from North Perth or can be couriered to a residential address at an approximate fee of $11 for Perth metro customers and $15 for our interstate customers. Perth business customers will, as always, receive free delivery, with subsidised delivery for eastern states businesses. >THE BACK STORY! Lastly, we have received lots of interest regarding the provenance of these very special olives. This is a rare heirloom variety of olives (think ancient Greece!) that grows predominantly on the eastern side of the Peloponnese. Our treasures are from the gorgeous seaside town of KIVERI (see photo), just to the north of Astros. Our grower Mihali is one of Greeces most talented small batch olive producers and follows a strict philosophy of all-natural production. Volumes of these olives are very limited and, at the beginning, Mihali was reluctant sell us any (!!) because they sell like hot cakes every year! Our Greek Food Philosopher, Nikos, depicted in the photo below, is the titan who convinced Mihali to start selling us some limited quantities in 2018. We loved presenting all of our small batch Grecian delights and informing the audience about the unique producer story behind each and every one of them!
