10.01.2022 We are loving Mels delicious quick and easy meals @ladymossloves @cooking_under_the_influence_ Thanks for sharing your recipe xx Put on your rice: Please rinse and steam Jasmin. No other rice compares. ... Choppy chop: 1 stick lemon grass 2 French eschallot 3 cloves garlic 1 thumb ginger Fry GENTLY in vege oil. You dont want any colour just beautifully softened. I cook on lowest heat for fifteen minutes at least. Once cooked leave to cool. Chop separately and put into a large bowl: 4 leaves wombok Handful each Thai basil, mint, coriander (plus stalks) Combine: 2 tbs oyster sauce 1 tbs fish sauce Juice 1 or 2 limes 1 tbs palm sugar (brown works fine) Check for balance add extra as needed of any ingredient until you hit that perfect balance. Add chilli to taste - more than you think you need or it wont work. For two/three I add 4 small hot red and 4 Thai green. Add these to your sauce and stir. BBQ nice fat green prawn cutlets. If using frozen make sure they are thawed, drained, dried with paper towel & seasoned with a little soy and cooked over a crazy hot BBQ each side until only just translucent. DO NOT OVER COOK. Combine salad leaves & herbs, warm aromatics & sauce. Toss to combine. Serve a little rice, a lot of salad, caramelised prawns and a little satay of you have it (you dont need it but the kids adore it).
