Aileen allows the citrus flavours and aromas to come across in the distilling and when you pop open a bottle you are instantly transported to the citrus trees in the garden.... 20.01.2022 We spent our Monday distilling juniper berries in our rotary evaporator Aileen. The distillery is filled with the beautiful aroma of juniper as we distil the berries over low heat and start our next batch of gin. Cold distilling each botanical separately is time consuming but we think it’s the best way to get all the flavours into a bottle. ... Our distillery garden chicken affectionately known as Mrs Chook stopped laying a few years ago but she is free to roam the garden including the veggie patch and herb garden.
