25.01.2022 Introducing Kye Bonofiglio. Kye started work at Villa du Pays over a year ago as a commis chef and now has been promoted to sous chef through his hard working, attention to detail and great attitude to his profession. Kye runs the grill section and is in charge of butchering the beautiful dry aged steaks that Villa du Pays is renowned for. 16.01.2022 Adam Baldwin Meet Adam, Head Chef of The Gates Restaurant. A Londoner living in the Hunter Valley for the last 22 years and one never to relinquish his English ...accent. Adam’s passion for food started at a young age, he was one of the youngest chefs to receive a Michelin Red M in England. He has collaborated with many famous chefs during his career in Europe and one who inspired him the most was Marco Pierre White. Some of these creations appeared on the menu at The Gates Restaurant.
