24.01.2022 Hold on to your hats! Cheese Burger Pull Apart Scrolls! Pizza Dough Recipe-... 4 cups plain flour Pinch of caster sugar Tsp salt 1 sachet (7g) dried yeast 1/4 cup olive oil 1 1/2 cups Luke warm water For the dough. Mix your flour, sugar, salt and yeast, mix your water and olive oil together, add to the flour and mix to a dough. Add a little more flour if it's a little sticky. Work the dough and knead it for 7- 10 minutes. This activates the gluten in the flour making a better dough. Cover with a tea towel and place near the fire for 30-45 minutes to prove. If the suns out during the day put it in a black bin bag with a splash of water in the bag and place in the sun. For the mince Fry onions, garlic, mince and dried oregano until you get the mince nice and Caramelized. To build Role the dough out to a rectangle, spread tomato sauce and American mustard over 3/4. Layer with cheese (I used jarlsburg cheese) add the mince and then bread and butter pickles. Role up, cut into 8 even rounds. Line a spring form tin with baking paper, stand scrolls upright and tuck them in together. Leave for 30 minutes to re prove the dough. Cook in the camp oven for 25-30mins on a medium heat. Half a shovel under and on top. Check every 10 minutes and adjust cooking heat and time accordingly.
23.01.2022 Creamy buttery scrambled eggs with cheese kranskys! . Rich buttery scrambled eggs are sooo good and an easy to knock up. A little extra love to take them from good to delicious! 3 eggs... 25g butter A few TBLS of either cream, creme fraise or sour cream. Salt and pepper. Medium hot pan, Melt the butter, add the eggs and mix with a spatula or spoon. Don’t get the pan to hot! Heat the pan, pull away from the fire whilst stirring. Do a couple times till they start to set folding with the spoon. You still want them to be a little loose (don’t cook them till firm!). Add the cream, stir in and finish off. Season with salt and pepper and your good to go! 15.01.2022 Garlic, lemon thyme and Parsley marinaded 3hr Fire Roast Chicken, wild mushroom risotto, broccolini and followed up with the classic sticky date pudding and butterscotch. Always a highly requested camp dessert! . Butter marinade- 250g Butter Sea Salt & cracked pepper... 1 bunch Fresh thyme 1 bunch Fresh parsley Zest of 2 and juice of 1 lemon 3 crushed cloves of garlic 1 tsp Paprika 1 tsp Onion powder . Blitz it all up in a blender and ziplock bag till required. Heat butter up and strain ingredients out (I learnt this step the hard way lol) Get yourself a good marinade syringe and inject the flavored butter into all parts of the chicken. Stuff the chicken with a couple bay leaves, the spare zested lemon halved and the stalks from the thyme and parsley. Season the cavity also with a little salt and pepper. I wrapped these in stainless steel wire and hung them from chains and hooks on a makeshift A frame. Rotate every half an hour. Perfect temp if you can hold your hand between the chook and fire for 10-15 seconds. 09.01.2022 Easy way to cover your rice for cooking when making a quick pilaf rice. Known in the industry as a cartouche. Basically grease proof or baking paper cut into a circle (fold a square into triangles Place tip at centre of pan cut of where it overhangs the pan making like an origami circle) placed on top of the rice and stock etc. place on coals, give it 10 Minutes and come back to perfect rice! (1 cup rice, 2 cups stock/water)

02.01.2022 Vegemite, Mozzarella & Caramelized Onion Pull Apart Scrolls! Another back catalogue classic for you to try if you haven’t already! The base is fresh pizza dough topped with Vegemite, mozzarella and Caramelized onion. ... The Vegemite was a good spreading but mixed with all the other ingredients you actually need to give it a good lashing. For the onions, they were just sweated down with a TBLS of brown sugar and a couple of TBLS of balsamic vinegar as they cook down. Spread all the ingredients out, roll and cut into 8ths and stand in a greased spring form tin. Set it aside in a warm space for An hr to re prove. Cook on a trivet in the camp oven for 25-30 mins. A Shovel worth under and on top. Enjoy
02.01.2022 Apple and Cinnamon free form tart with custard. Easy as recipe. Shop brought puff pastry, tinned apples, sugar, cinnamon and custard or cream. Line a tin or the campoven with pastry, cook the apples, fresh or tinned in a little sugar and cinnamon, let cool. Fill pastry and fold the edges in, egg wash and sprinkle with sugar...or not Serve with cream or custard. ... Not all cooks are perfect with coals and a camp oven. But, you learn from every cook and experiment and that’s how you grow! They still taste bloody good at the end of the night! With the weather at -8c it was so hard to keep coals hot and an even heat around the camp oven! Threw me to be honest!
