21.01.2022 My journey to plant-based has been awkward and messy. Everything I knew and did had been turned upside down. Awkward attempts at mimicking dishes, ‘buddha’ bowls and spending too much money at an organic shop on ‘special’ ingredients.... Throw in the fact that healthy eating and healthy living is counter-cultural and trying to raise two daughters and make a living; I had my work cut out for me. It can be a difficult (but rewarding) journey. By now you have started to realise that it is time to upgrade the way you eat so that you can thrive and have more abundance in your life. 21.01.2022 A whole food plant-based way of life isn’t just about removing animal products. It is an eating philosophy that is proven best for our health when adopted at least 95% of the time. It means looking at all the different foods and nutrients that your body is looking for for optimal health. ... It takes into consideration what is healthiest for our bodies given the poor health of our oceans and the poor health of the anti-biotic and hormone pumped bio-accumulators that are animals and fish. But to do this we need to look at everything going into our bodies - not just eating some veg. This means fermented foods, lentils, sea vegetables, fruits, an abundance of greens, a variety of mushrooms, spices, herbs, nuts, whole grains and more. All in their whole, unprocessed forms. 17.01.2022 I (Jess) was walking the trail today and I was excited to come across some beautiful ‘wildlife’. What do we even mean by the term wildlife? Because it’s not a farm animal or pet? Is that what makes them ‘wild’? Doesn’t every being deserve to be ‘wild’ and free?... Farm animals weren’t born as farm animals. No animal was born into this world to be treated the way we treat them. Whilst this was a beautiful experience, I couldn’t help but feel how ridiculous that having an experience with wild life like this has become such a unique, one off experience.

14.01.2022 So why aren’t we eating enough vegetables, even though we know we need to? It’s not as simple as ‘eat your veg’ anymore. It’s so much more complex. Even though it should be simple; eat wholefoods, take only what you need, love yourself and others. We have become so disconnected from ourselves and our true nature and we find ourselves amongst dark oppressive systems that make us feel powerless. Many times a day, we are bombarded with advertisements selling food products that l...iterally destroy our health. In the name of capitalism, our government does little to protect us from this. Our number one killer in Australia is diet related heart disease. Yet, we have fooled ourselves into thinking that this is a natural result of old age. It isn’t. We are destroying our planet, polluting our water and killing off eco-systems. Our medical system focuses on a pill with side-effects as the solution instead of making side-effect free lifestyle choices. We need to be awake and we need to be resilient. Otherwise we will easily go back into an unconscious state which means more destructive behaviour and less vegetable eating! To eat healthy you need to be living in a connected way. Living in a more connected way results in a complete re-examination of your whole life. Once we had realised that we had been asleep to the way in which we ate food, we realised that was probably not the only thing we were asleep to. It was an invitation to live our whole life in an awake state. This is why we believe in order to really make change in your diet and in the world, it is more than just trying to eat more vegetables. For us to sustain a healthy diet, we find we have to align our whole life and environment to one that is healthy and connected. Slowing down, connecting to Mother Earth, contemplation, hope, feeling empathy and compassion for the voiceless animals, understanding how what we eat is affecting our planet, connecting to fun and zest and prioritising family and community. Doing these things has made it so much easier to eat well. Sprouting increases the nutrient value of our food, makes those nutrients more readily available to absorb and are very low in calories, making them extremely nutrient dense foods! By sprouting your seeds, nuts and beans you can increase the fiber, protein and amino acids present as well as unlocking many phytochemicals and nutrients. It’s always better to eat seeds, nuts and beans then not! Don’t let anyone tell you other wise but by taking... a few extra minutes each day you could really maximise your intake. 07.01.2022 I am so proud of how much my kitchen has evolved over the last 5 years. Throw back to 2015 and you would open my cupboard to find processed flours, bottled condiments, packets of meats and cheeses and some fresh food. And I was already someone who took pride in eating 'healthy'. In my restaurant I was making food from scratch but you would still find cooking oils, white processed flours, breads and brown sugar. When you include something 'bad' in your diet it's difficult to s...top it from ever so steadily increasing it's way back into all of your food again. For us it was like smoking - we couldn't just have one a day. We had to commit fully to a new way of eating so that we could make long-lasting change that would see us eating the foods we were wanting to get more of. The biggest reason I find that it can be a long process (long-lasting change always happens slowly), is because the way in which I desired my family to eat was counter-cultural to everything around me. We live in a society that is too busy to eat real food, has no idea where their food came from who or how it was grown (or when, where and how it was slaughtered) and disconnected from themselves, their bodies and their emotions. My family had to spend time re-connecting, researching, re-aligning and releasing all of the societal conditioning to make way for a happy and healthier way of existing. We eat out about once a year when we go away. We pretty much never buy processed food. We don't even find this difficult, it's not even a self-control thing. It's just that we have been eating this way for so long, we are really connected to how good we feel when we eat like this, it just isn't enjoyable to eat crap. I have completely adapted how I cook and source my ingredients so that I always have an abundance of food to create with so that I am prepared if time or energy is lacking. 04.01.2022 Those of you who have been a student of mine will know that I am not into fancy equipment. I am all about accessibility and simplicity. Running a commercial kitchen with limited help and now a father of two lively daughters where time can be limited, I have got my processes down pat pretty quickly. This much loved grater is one of my favourite kitchen tools. From grating turmeric and ginger for my curries to grating apple for our family porridge or making a quick salad and g...rating some carrot and zucchini, it’s always being used.
