17.01.2022 Bresaola // A spiced and air-dried beef. We've been busy in The Grazing Room kitchen experimenting with different spices and techniques for our in-house cured meats for our grazing boards. This Bresaola was soaked overnight in djinta djinta Cabernet Sauvignon Malbec giving the muscle a beautiful purple colour and 'wine-y' aroma, then rubbed with sea salt, sugar, rosemary and black pepper. The curing process takes 2 weeks where the moisture is drawn out of the beef and the be...autiful flavors infuse into the muscle. 06.01.2022 Coppa/Capocollo // a traditional Italian pork cut made from dry-cured neck muscle. We washed the meat with djinta djinta Shiraz, rubbed with olive oil, Hungarian paprika, fennel seeds, black pepper and chilli flakes. Now that they've been netted, they'll hang in the Cleaver Salumi Cabinet @cleaver_salumi_cabinets for close to 6 - 8 weeks after they've lost approximately 30% of their original weight.
