20.01.2022 Earlier this year Valentine D'Souza , the co-founder of Goan Cuisine, very sadly passed away. We would like to take the opportunity to say how much we enjoyed working with Valentine and his wife over the past 15 years. Valentine's passion and joy for great food was infectious and we learnt a great deal from him. Valentine was incredibly generous. We will miss his warm smile and his impromptu lunch drop offs with the fresh mango and chilli. We would like to wish Karen and her family all the very best. Goan has been sold to a Sydney based company where it will be manufactured. It will be available through European Foods.

19.01.2022 What is koji? Its a fermented food from Japan made from steamed rice which has been treated with a special mould. Its used to make soy sauce, miso and mirin. Available as a wet paste, powder or now as a dry rice. Yamakis Koji Rice is made seasonally in house. It is the same koji that is used in their famous Shoyu and Unpasteurized Miso. Koji performs two main functions in Japanese fermentation. Firstly it is used to convert starch into sugars (Amylase), delivering the r...ich sweetness of Mikawa mirin and providing the sugars for alcoholic fermentation in Sake. Secondly, it is used to breakdown proteins into amino acids (protease) and is responsible for the umami savoury characteristics of miso and shoyu. When made into a Shiro Koji you can easily utilize the protease action to both tenderise and improve the flavour profile of meats, seafoods, tofu and cheese. SHIO KOJI 225g Yamaki Jozo Koji 50g Sea Salt 1 cup of water To make shio-koji, put the koji in a bowl, using your hands to rub the koji and break up any clumps. Add the salt and mix well. Pour in the water and stir together, making sure the grains are evenly wet. Cover loosely with a clean tea towel and leave at room temperature for around 7 days, stirring the mixture from top to bottom each day to aerate it. The shio-koji is ready when it smells and tastes sweet and is distinctly savoury.

It might look like a green merkin, but its definitely seaweed. Salty, nutty, bitter with a unique seaweed flavour. Impossible to farm, this seaweed is wild harvested and seasoned with sesame oil and salt.
