20.01.2022 Eggplant pasta INGREDIENTS 2 tablespoons extra virgin olive oil 1 onion diced ... 1 large eggplant, cut into 2cm pieces (keep skin on) 3 garlic cloves, crushed 1 long red chilli, thinly sliced, plus extra to serve 700g Passata 1 cup water 400g pasta of choice 2 tablespoons torn fresh basil leaves, plus extra leaves to serve Kalamata olives DIRECTIONS * Step 1 Heat oil in a large, deep frying pan over medium-high heat. Add onion. Cook, stirring occasionally, for 5 minutes or until softened. Add eggplant. Cook, stirring occasionally, for 4 to 5 minutes or until eggplant is golden. Add garlic and chilli. Cook for 1 minute or until fragrant. Add Passata, and water . Bring to the boil. Reduce heat to medium-low. Simmer, stirring occasionally, for 10 to 15 minutes or until eggplant is very tender. * Step 2 Meanwhile, cook pasta following packet directions. Drain pasta, reserving 1/3 cup cooking water. * Step 3 Add pasta, reserved cooking water and basil to eggplant mixture. Reduce heat to low. Cook, tossing, for 1 minute or until combined. Season with salt and pepper. Divide pasta mixture among serving bowls. Top with black olives, cheese and extra chilli and basil. 10.01.2022 Mjadara Loubya Ingredients 4 onions diced 2 cups kidney beans soaked overnight... 3/4 cup coarse Bulgur 3/4 cup Olive oil Directions In a large pot cook the onions in olive oil on medium low heat until onions are almost black (yes almost burnt) then add 2.5 litres of water to the pot (fill the pot to the half way point with water). Continue to cook the onions for 5 minutes on medium heat till the water changes colour and onions are almost a paste. Then add the kidney beans and cook with the lid on, medium low heat for 1.5 hours or until beans are soft. Once beans are soft add the bulgur and a generous amount of salt. 02.01.2022 Spanik ew Riss (Lebanese spinach and rice) Ingredients 500 g minced beef 4 garlic cloves ... 3/4 cup lemon juice 1 punch coriander chopped (keep stems) 8 large bunches of English spinach chopped (keep stems) Salt Directions 1. Place large deep pot on medium-high heat and cook the minced meat till just brown. Discard the liquid. 2. Place meat back on the stove and add crushed garlic and cook for 2 more minutes. Then add chopped spinach with stems and coriander and put lid on pot until spinach has wilted down and liquid has released. Stir occasionally. 3. Add lemon juice and salt then stir. 4. Meanwhile in a seperate small fry pan melt butter and brown the pine nuts. Once pine nuts are brown you can now serve up. 5. In a plate add Lebanese rice, add spinach mixture then add toasted pine nuts on-top.
