20.01.2022 Monday’s are often meat-free in our house. I think it’s a nice way to start with week, with a plant-based dinner loaded with fresh veg. A super easy meat free dinner I love that I prep on Sunday’s is a yummy Italian vego lasagne. This one will have: roasted pumpkin + capsicum, spinach, ricotta, and an easy homemade tomato sauce where I disguised a few cheeky vegetables (mushrooms + grated zucchini). . For the most part my kids are good but theres times where Im like hang on you loved that last week then just like that its off their faves list. . So often were telling our littles not only what to eat but what also what to wear, when to go to bed, homework etc etc. .... So let them have a bit of control over their daily menus. Im trying this checklist this term. Varying their lunch intake each day of the week; but get them to choose what they want, make it fun by having a little checklist on hand, like a menu. It worked this morning, so fingers crossed the novelty doesnt wear off too soon! . Note: the vegemite/ jam option is a treat . I got a beautiful jar of homemade jam for mums day, so were using that up. Better than the sugar laden supermarket brands. . 01.01.2022 Home today exercising, cooking, working, eating, on repeat . Kids back at school so Im catching up on everything! So how bout I share with you this beauty:... Gluten Free Raspberry Brownie . 1. Pre heat your oven to 180deg. 2. Line a low baking dish with paper. 3. Mix in large bowl, 1.5c almond meal, 1/2tsp baking powder, punch sea salt + 1/3c cacao or Dutch coco powder. 4. Place a heat proof bowl over a saucepan of simmering water + add 3/4c cacao nibs or broken up dark choc + 120g butter (continue to stir till it all melts) Yum! 5. Best 3 eggs in another bowl + add a splash of vanilla + 2/3c maple syrup or honey. 6. Now when the melted butter mixture is cool, add it to the eggs + honey etc. 7. Then add this to the dry. Mix well. 8. Pour into prepped tin + press some fresh raspberries over the top. 9. Bake for approx 20mins. 10. Store in fridge.
