Now the part 2 we promised, our process: Like all our other eggs, this one will get checked for imperfections, stamped, and packed for the customer, all right here in chickens luxury mobile hen house. It’s then taken straight to our fridge until we deliver it to the customer’s door in a couple of days. And that’s it, that’s the whole process. 21.01.2022 We’ve been asked why our eggs are hard to peel after boiling, here’s why: the short answer is because they’re FRESH. Eggs shrink over time. Read on for the long answer. Here’s a perfect demonstration: This is a shell-less egg, every now and then we get one laid like this. All it has to protect it is a thin membrane, no hard shell.... Now, when this particular egg was laid, it was quite full, it was the shape and size of a normal egg, just without the shell. Only four days have passed and you can see how shriveled it is already. Now, obviously this process has been hugely accelerated due to having no protective shell, but this is what happens to the inside of a normal egg over time too. Eggs are porous, not sealed or waterproof. This means that they slowly lose volume, taking in air between the shell and the membrane, and releasing carbon dioxide. As this happens the egg white becomes more acidic which weakens the bond between the white and the membrane, making them much easier to peel after boiling. The fact that eggs are porous also dictates some of our farm practices that ensure you get the best, premium produce. 14.01.2022 ISO UPDATE: the chooks are still laying and we’re still delivering A few have asked if we’re still going to deliver to Melbourne curbing this lockdown period and the answer is YES! We are primary producers, an essential industry, so we certainly don’t stop. As has been our practice for a while now though, we are sanitizing our hands between each delivery and we always wear disposable gloves when we’re collecting and packing our eggs. The only hands that touch our eggs are... yours! So, if you need eggs but don’t want to go out - get your orders in! 13.01.2022 The ground is finally starting to dry out a little here at The HomeGrown Farm and what a relief it is! With so much rainfall this season we’ve had endless mud which doesn’t bode well for clean eggs! We’ve doubled how often we move the chooks in an effort to keep them out of the mud and to keep our eggs as clean as possible but we still spend a LOT of time dry cleaning eggs. Why don’t we just wash our eggs? It would be so much faster!... Yes it would be but there are two big reasons why: An egg has a natural coating called the bloom or cuticle which protects it from bacteria as it exits the chicken, as well as for the first while after it is laid. This coating is the egg’s best defense against bacteria as it blocks the pores of the shell - this also happens to keep the egg super fresh! As soon as the bloom is removed the egg starts to take in air at a much faster rate meaning the egg won’t keep as long. Washing an egg with water removes the bloom. Now it’s not all bad news though with washing, if it’s done correctly. If we were to scale up further it simply wouldn’t be cost effective to dry clean every egg by hand as we currently do. It’s time consuming, but ensures we are selling the best product we can with what we have. We could do what other farms do and wash under running water by hand, this would still be faster than our current process but it’s not a proper sanitized method of cleaning, if not done perfectly every time it can actually just open the egg up to more bacteria and transfer it from one egg to another. This leads to the second reason we don’t wash our eggs: cost. To wash an egg properly it must be done with jets of warm water as the egg is brushed (much like a touch car wash) and a chlorine solution for sanitation. Washing in this way kills any bacteria present and protects the egg, given that the egg is handled in a food-safe manner after washing. Machines built to do this are expensive to purchase and don’t often come up for sale second-hand. This means the price to entry for washing eggs properly is incredibly high. For now we’ll keep cleaning our eggs by hand! What do you think, should we be washing our eggs to save time? #pasturedeggs

04.01.2022 Our girls are loving these spring mornings with glorious sun - especially on new paddock day! There’s been so much happening here on our farm that it’s been hard to keep everyone updated so here’s a little snippet of what we’re doing: 43 ’s from our young hens yesterday and that number is growing every day - but they’re TINY eggs so not yet ready for sale. They’ll grow quickly though!... New egg cartons on the way to handle the bigger eggs our mature hens are laying and we’ve got a freshly designed label coming too this is going to be a huge labour-saver as the labels are coming pre-stuck on the cartons - we are SUPER excited about this!! We’re picking up an egg grader on Saturday which will sort our eggs by weight - it’s 50+ years old and an extremely heavy piece of machinery but it’s still going strong and should be another great time saver for us, as well as allowing us to start marketing to supermarkets A few final improvements are still to be made on the new van to get it to a finished state but the girls are loving it anyway and we’re loving the big doors that make nest box training so much easier. We’re picking up at least 50 hens a day and popping them in the nest box to show them that there’s a sheltered and dry place for them to lay their eggs and so far it’s working well, only a couple are laid on the ground each day. This process takes a lot of time but it’s well worth it as we do not sell the eggs that are laid on the ground. We’re looking into new distribution channels to help get our eggs to more customers as the new flock come into full lay. We’ll need to be moving 600+ eggs a day and there’s no way we can deliver that many eggs door to door as we currently do and still get farm work done. Hopefully some exciting partnerships will be grown here to get our eggs out there! Lots more is happening around the farm but that’s all for today. If you’ve read this far - say hi in the comments!
