Ingredients:... 125g soft butter cup firmly packed brown sugar 125ml treacle 1 egg yolk 2 cups plain flour 1 tablespoon ground ginger 1 teaspoon mixed spice 1 teaspoon bicarbonate of soda Method: Beat butter and sugar in a small bowl with an electric mixer until creamy. Beat in treacle and egg yolk. Stir in sifted dry ingredients. Knead dough on a floured surface until smooth. Refrigerate for 50 minutes. Roll out dough between two sheets of baking paper until approximately 4mm thick. Cut gingerbread men using cutters. Place men 3cm apart on greased oven trays. Bake in a moderate oven for 10 minutes or until firm (will depend on the size of the biscuits). Transfer to a wire rack. Ice, decorate and enjoy.
