11.01.2022 - 1 cup unsweetened coconut flakes - 3lb. mixed hardy greens (such as Tuscan kale, curly kale, - Swiss chard, and/or mustard greens; about 4 bunches)... - cup virgin coconut oil - 6 garlic cloves, lightly crushed - 1 large onion, finely chopped - 1 red Thai or Fresno chile, thinly sliced - 1 2" piece ginger, peeled, thinly sliced - Kosher salt - 2 Tbsp. mustard seeds - 2 tsp. ground coriander - tsp. ground turmeric - 2 cups unsweetened coconut milk - cup coarsely chopped cilantro Step 1: Preheat oven to 350. Spread out coconut flakes on a parchment-lined rimmed baking sheet and toast, undisturbed, until some are golden brown (some will remain white), 57 minutes. Let cool. Step 2: Meanwhile, remove ribs and stems from greens and discard. Cut leaves into 1"-thick strips; set aside. Step 3: Heat oil in a large skillet over medium. Add garlic and cook, stirring often, until golden brown, about 3 minutes. Add onion, chile, and ginger; season with salt. Cook, stirring often, until onion is softened, about 5 minutes. Add mustard seeds, coriander, and turmeric and cook, stirring to evenly distribute, until fragrant, about 1 minute. Step 4: Add coconut milk to skillet and bring to a simmer. Add reserved greens a handful at a time, letting each batch wilt slightly before adding more. Cook, tossing occasionally, until greens are tender and mixture looks creamy, 1518 minutes. Taste and season with more salt if needed. Step 5: Transfer greens to a platter or large shallow bowl and top with coconut flakes and cilantro. Enjoy! Recipe from: bon appetit



10.01.2022 What a year this has been. I have definitely strengthened my vision on what is most important in my life. All problems have a solution, problems are soluble in solutions, and solutions areinexhaustible. We have powerful minds which work by creativity and logic, we certainly have the power to create solutions. The only question is, are we going to create a new world from a place of wisdom or Ignorance?

10.01.2022 - 1/3 cup (65g) pitted dates... - 2/3 cup (105g) roasted or raw almonds, or any other -nut/seed - Pinch of any good-quality salt - 1 cups (130g) raw cashews - 1/2 cup (90g) thick plant-based yoghurt, such as coconut, soy or almond, unsweetened - 1/2 cup (120g) melted coconut oil* - 1/4 cup (100g) rice malt syrup or maple syrup, to taste - 2-3 limes, zest and juice (~90mL or 6 tbsp), to taste - 1/2 cup (~50g) diced papaya, in 1cm cubes - 1/4 whole papaya, peeled and seeded 1. Soak the dates (for the base) and cashews (for the filling) in water in seperate bowl. Cover and set aside for at least 4 hours. 2. Add the nuts to a food processor and process until it forms coarse crumbs. Drain the dates and add them to the food processor process until everything is combined. The mixture should stick together when it is pinched between two fingers. 3. Line a 20cm (8-inch) loaf tin or container with baking paper. Firmly press the base mixture into the bottom to form a crust. Set aside. 4. Drain the cashews. Add them and the rest of the filling ingredients (except the papaya) to a blender and blend until combined. 5. Pour the filling on top of the base. Scatter the cubed papaya over the filling and gently press them into the surface. Cover and set aside the mixture in the fridge for at least 6 hours. 6. Top the set slice with fresh papaya. Cut with a sharp knife. 7. The slice needs to be served chilled otherwise it will melt. Store leftovers in an airtight container in the fridge for up to 5 days. Enjoy! 09.01.2022 - - 4 small to medium eggplants (about 2 lb.), halved lengthwise - 6 Tbsp. extra-virgin olive oil, divided... - Kosher salt - 1 1" piece ginger, peeled, finely grated - cup white miso - 2 Tbsp. plus 1 tsp. tamari soy sauce or regular soy sauce - 2 Tbsp. unseasoned rice vinegar - 2 tsp. sugar - 2 Tbsp. fresh lime juice - 2 Persian cucumbers, sliced into rounds - 4 scallions, sliced crosswise into 2" pieces, then lengthwise into matchsticks - 2 cups mixed cooked whole grains (such as barley, freekeh, farro, and/or quinoa) - 1 cup basil leaves Step 1: Place a rack in upper third of oven; preheat to 400. Score cut sides of eggplants with a sharp knife. Rub with 2 Tbsp. oil and season with salt. Roast, skin side down, on a large rimmed baking sheet until tender but not browned, 2228 minutes. Step 2: Meanwhile, whisk ginger, miso, tamari, vinegar, sugar, and remaining 4 Tbsp. oil in a medium bowl until smooth. Set 3 Tbsp. glaze aside in another medium bowl. Step 3: Increase oven temperature to 450. Spoon remaining glaze over cut sides of eggplants. Roast until glaze is browned and bubbling, 1215 minutes. Let cool slightly. Step 4: While the eggplants are cooling, whisk lime juice into reserved glaze. Add cucumbers, scallions, grains, and basil and toss to coat. Step 5: Divide eggplants among plates; spoon grain salad over. Enjoy! Recipe from: bon appetit
