24.01.2022 Pasta class on a gloomy, rainy Sunday. Just perfect, because there’s always comfort in carbs. This is our 2nd last pasta class for 2020, so last night I released some January classes open for bookings on our website. Taking a little different format for summer. Starting in the PM, and creating lighter sauces using prawns and summer tomatoes ( hopefully from my garden), and a pasta salad too then finishing in dinner under the pergola. 13.01.2022 What to do with leftover egg whites after making fresh pasta or in today’s case, 4kg of gnocchi?? Find yourself a super-duper friand recipe that’s what! These little gems work with berries, fresh or frozen (1+1/2 cup), citrus zest and flaked almonds, choc chips , you name it. Freezer friendly and approved by my the kidlets. Pictured is orange and almond- zest of 1 pesticide free @gooreepark orange and topped with flaked almonds. ... 1 CUP (120G) ALMOND MEAL 1 CUPS (260G) PURE ICING SUGAR, PLUS EXTRA, FOR DUSTING 34 CUP (95G) PLAIN FLOUR TEASPOON BAKING POWDER 5 EGGWHITES 125G UNSALTED BUTTER, MELTED Preheat oven to 160C. Place the almond meal, sugar, flour, baking powder, eggwhites, butter in a large bowl and whisk to combine. Add fruit, or zest or choc chips. Stir till just combined. Spoon the mixture into a lightly greased 12 x -cup-capacity (125ml) cupcake tin. Bake for 3035 minutes or until cooked when tested with a skewer. Remove from the tins and place on a wire rack to cool. Dust with the extra icing sugar to serve. Makes 12. See more
