Don't forget to tune in next Tuesday night for the final instalment of our Quarantine Cuisine series! #Vegemite #TastesLikeAustralia #VegemiteQuarantineCuisine VEGEMITE & Honey Roast Chicken Serves: 4 Prep time: 5 minutes Cook time: 1 hour Ingredients: - 1 whole chicken (around 1.6kg) - 1 tbsp VEGEMITE - 1 tbsp white wine or Shaoxing wine - 2 tbsp honey - 1 tsp dark soy sauce - 2 tbsp olive oil (or melted butter) - lemon wedges, to serve Method: 1. With a pair of kitchen scissors cut the backbone out of the chicken and press down on the breast to flatten the chicken. Cut the backbone into pieces and place in the base of a roasting tray. Place the chicken on top. 2. Mix the VEGEMITE, wine, honey and soy sauce together and spread all over the chicken on all sides. If you can, refrigerate for a few hours but you can also cook it straight away if you prefer. 3. Heat your oven to 180C (fan-forced, or 200C conventional). Pour the olive oil (or butter) over the skin of the chicken and roast for 1 hour. Check the chicken after 45 minutes and use foil to cover any parts of the chicken that are browning too quickly. 4. Remove the chicken from the oven and rest for 10 minutes. (You can use the pan to make a gravy if you wish.) Serve with lemon wedges.
