23.01.2022 Cooking inspiration from The Meatsmiths team Lemon Pepper Chicken and Bean Tray Bake ENJOY!!! What you need - 4 x Large chicken thighs... 1 x Tablespoon lemon pepper seasoning 2 x 400g can four beans 1 x 400g cherry tomatoes in tomato juice 2 x Garlic cloves 1 x Bunch asparagus 1 x Zucchini 1 x Lemon 1 x Parsley What to do - Step 1 Preheat oven to 180C/160C fan-forced. Step 2 Heat a large frying pan over medium-high heat. Add chicken. Cook for 3 minutes or until starting to brown. Turn and cook for a further 3 minutes. Remove from heat. Sprinkle chicken with lemon pepper, turning to coat. Transfer to a 6cm-deep, 20cm x 30cm (12-cup-capacity) roasting pan. Roast for 30 minutes. Step 3 Add beans, tomatoes and garlic to the pan. Season with salt and pepper. Roast for a further 10 minutes or until chicken is just cooked through. Add asparagus and zucchini. Roast for a further 5 minutes or until tender. Sprinkle with parsley. Serve with lemon wedges. See more

09.01.2022 We all love a good Before and After photo right! This rack of lamb has had the ultimate makeover, and now looks good enough to eat Try it yourself today with this amazing recipe Roast rack of lamb with rosemary salt, by Good Food Australia Ingredients 2 x 8-boned French lamb racks (ask your butcher to French trim your lamb racks)... 2 heaped tsp finely chopped fresh rosemary 2 tsp fine sea salt 100ml olive oil Method 1. Preheat your oven to 200C. Mix the rosemary and sea salt together and lightly season the lamb racks with half the sea salt and rosemary. 2. Heat a heavy-based frying pan on the stove until hot. Add a drizzle of olive oil and place the lamb racks in the hot pan and sear all the sides. Once well coloured, remove the lamb racks and place on a cake rack in a roasting tray. 3. Roast the lamb in the oven for about 20-25 minutes. This should produce a medium rare to medium lamb rack. Remove from the oven, season with the remaining rosemary salt and drizzle with the remaining olive oil. Allow to rest for 10 minutes before serving. Place the lamb racks on a platter and garnish with fresh rosemary sprigs if available.
