25.01.2022 Prawn and zuchinni risotto, when we put this on the menu I had no idea the stir it was going to create. It's not the dish I expected to be a our biggest seller. Prawns are expensive so we work hard to make the most of this everyday luxury, naturally we reserve the meat for the risotto itself but the shells are used in two different ways first we make stock to use in the risotto base and every couple of weeks we also make a rich crustacean oil for garnishing. This is the view back down Murray's beach what can't be seen is the huge amount of detritus thrown up by the huge tides we've been having. Pretty from a far but far from pretty.....
