25.01.2022 Wild Food This delicious plate of food is an ode to wild dandelion greens. Yep. Dandelion. That weed most folks don’t seem to like in their gardens is a nourishing, edible herb. The roots, leaves, stems and flowers are all edible. They are resilient and can thrive anywhere: some useful qualities, wouldn’t you agree? I foraged these dandies within 1km of my home, washed them, boiled them for 5 mins and then splashed them around in some olive oil, lemon juice and salt. All... they needed was a slice of sourdough and a sprinkle of pine nuts (or anything else deliciously crunchy) et voila. Free. Foraged. Food. 23.01.2022 The Country Boule I love dipping the crusty ends in olive oil and balsamic vinegar, maybe with a thin slice of aged parmesan cheese. I love the fluffy centre slices adorned with any number of toppings: avo & goats cheese garlicky kale & poached eggs ... lemony dandelion greens & pine nuts mushroom bruschetta triple citrus marmalade smoky, slow cooked beans with runny eggs spicy shakshouka butter and raw honey You get the drift. Wholesome nourishment. For me, it’s never about the calories. Or the macros. Or any other label. If you feel nourished by something, it is nourishing you. On the same note, if it feels like poison (for example, you feel shame around eating bread, or carbs, or gluten), it is poison to you. The best part? 22.01.2022 Kale harvest Today marked my first harvest from our veggie garden that we panic planted back in March. Kale is the one of the only plants really prospering, because it’s in one of the sunnier spots and I planted hardened seedlings that were well developed so they had a great head start. 18.01.2022 When we understand ego, we understand that compassion is the ointment of the ego. Have compassion for yourself, when you catch yourself in a spiral of judgement, guilt, shame and denial. Have compassion for others, when you lack understanding and feel the need to judge, guilt, shame and deny their reality. Compassion anoints the need to divide, compare, judge and elevate our false sense of self, that false sense of self being the ego. Compassion for self and others anoint...s the division ego creates - the division between self and others. This divide is an illusion. Have compassion for yourself when you realise that what you’re shouting at others, you’re actually shouting at self. Our outer reality is a projection of our inner reality, and if you’re feeling turmoil within, you will always seek the turmoil without. Hold compassion for yourself while you realise that the illusion we once thought was real is dismantling. Hold compassion for yourself while we alchemise the lower frequencies in our consciousness - the individual and the collective. Everything we are seeing on the collective level exists internally, so that’s where we start. 13.01.2022 The Future... Something we are all working towards. Something that seems more important than where we already are. Why do we sacrifice the Now for our Future? In other words, why do we sacrifice what exists for what doesn’t exist? ... We somehow reverse engineer our lives from this idealistic future place where we think we’d rather be, and work backwards and call it worthwhile? We justify sacrificing the Now because it’ll be worthwhile in the Future? All this really says is that the ends justify the means. But what if I reminded you it was actually the other way around? The means justify the ends, and only conscious means can result in conscious ends. Suffering now can only result in more suffering. Freedom now can only result in more freedom. Love now can only result in more love. Peace now can only result in more peace. The value of your present moment determines the value of your future. We need to start where we are in the Now, to get to where we want to go in the Future. Doesn’t that feel so liberating? 07.01.2022 Sunday morning baking is becoming a total mood I’ve been playing around with scoring since I invested in a bread lame and it’s so exciting to see the loaves as they come out of the oven! 05.01.2022 Frugal food Waste veggie stock would have to be up there with one of my all time favourite frugal foods. It’s literally goodness made from scraps you’d otherwise throw away (hopefully at least into a compost or worm farm) but before you do that, turn those scraps into nourishing stock that is so versatile! It’s a must-have staple in my fridge. Simply freeze carrot tops and skins, onion cores, garlic skins, celery leaves and cores, parsley stalks, thyme and rosemary stems ...etc in a bag until you’ve got enough to fill a pot. Then cover with water, add some salt, peppercorns, a bay leaf if you’re feeling fancy and simmer for about an hour. Strain and keep in the fridge for a week or two. Use as you would any other stock! Even cook rice in veg stock if you like, which is such a beautiful food for convalescence if you’ve been unwell Got any other frugal food tips?
