24.01.2022 In March we decided to offer small orders for delivery meals to help people out with a contactless healthy meal option. We are very busy now since restrictions have lifted slightly, and trading back to normal. Our weekly drop offs have been put on hold- it’s a bitter sweet feeling! 23.01.2022 After the Christmas and New years holiday, most of us need to give our liver a little holiday- wouldn't you agree!? Why not incorporate superfoods to support our liver function that is tasty at the same time. Beetroot contains antioxidants, vitamin A, vitamin B-6, and iron. These compounds help protect the liver from inflammation and oxidative stress while enhancing its ability to remove toxins from the body. Try this fresh, tasty and cleansing salad to help support your live...r function! Raw beetroot salad with @shiraleeorganicmeats lamb back strap, topped with @meredithdairy goats cheese. Recipe: serves 2 Raw sweet beet salad -2 raw medium sized beetroots -3 carrots - apple of your choice (peeled) -spring onions -14 bunch of parsley -100mls extra virgin olive oil -1 tbsp wholegrain or dijon mustard -2 tbsp lemon juice (or approx half a lemon) -2 tbsp apple cider vinegar -150g of baby spinach (chopped) -Salt to season -@meredithdairy goats cheese to serve 1 cube per person -200g lamb back strap Method: 1. Wash and prepare the vegetables. Peel carrots and beetroots if you wish, however I simply scrubbed clean and chopped off any unfavourable parts. Warning - you may want to wear gloves to protect your hands from beetroot juice 2. Season lamb and prepare a medium to hot pan, cook lamb for about three minutes on each side, or until browned, then turn briefly onto the thinner sides until meat is browned all over. This will produce medium-rare lamb. Rest until serving. 3. Finely chop the parsley, spring onions and spinach. 4. Using either a food processor with the thick shredding setting, or a hang grater, begin grating the carrots and beetroot. 5. Using a food processor or even a thermomix keeps things clean and makes things quicker. 6. Drain out any beetroot juice and place the shredded carrot and shredded beetroot in a mixing bowl 7. Add chopped spring onions and parsley - begin mixing gently with two wooden spoons 8. Begin adding liquid ingredients, including the olive oil, mustard, apple cider vinegar and lemon juice. 9. Add salt to taste - then serve! Tip- *If you are making this salad in advance, make sure you dress the salad then to save it from going soggy. *Make sure to use organic apple cider vinegar with the ‘mother’. The mother is an unfiltered substance that consists of strands of proteins, enzymes, and friendly bacteria that give the product a murky appearance. Also great for digestion and supports the liver!

20.01.2022 Egg free Raspberry and lemon muffins Recipe: Ingredients 2 cups gluten free oat flour if using homemade, make sure it’s very finely ground, not coarse... cup finely ground, blanched almond flour or a nut free alternative 1 teaspoon baking soda teaspoon baking powder teaspoon salt 2 tablespoons water cup non-dairy milk 2 tablespoons lemon juice zest of 1 lemon (2 tablespoons) 3 tablespoons melted coconut oil cup coconut sugar cup pure maple syrup teaspoon pure vanilla extract 3/4 c of organic raspberries (fresh or frozen) Method: 1. Blitz oats in a blender or food processor if you’re making your own oat flour. 2. Place all ingredients except raspberries into a food processor, blender or @thermomixaus on a medium speed and increase to high until the mix is smooth If you don’t have a blender or food processor place dry ingredients to a large bowl, mix in wet ingredients and stir well (except raspberries) 3. After the mix is done slowly stir in raspberries then place mix evenly to a greased muffin tray. You can use muffin paper cups too if you wish. I like to use them because there’s less cleaning 4. Garnish muffins with a few raspberries on top 5. Bake on 175 degrees for 25-30 mins 6. 07.01.2022 Gluten free baking Peanut and chocolate cookies Recipe: 1 cup of rolled oats or quinoa flakes... 1/2 c of gf flour or almond meal Pinch of salt 1 tsp of baking powder 1 cup of coconut sugar 1 cup of peanut butter 1 tsp of vanilla powder or extract 1 egg 3 tbsp of dark choc chips or 1/4 block of your favourite chocolate Method: -Preheat oven to 175 degrees -Mix oats or quinoa, flour, salt, baking powder and sugar to a bowl -Add to bowl peanut butter, egg, vanilla and stir to make a dough.
