Brown rice vermicelli, green tips of spring onions, sesame seeds, pickled carrot, capsicum and salt and pepper tofu. I served it with a chili, lemon dressinf dressing :) simply divine! 19.01.2022 I’m wishing you a happy new year! Thanks for your support this year as I started my business. I’ve loved every moment of it. I hope that you have found the recipes and posts useful. For me 2019 will bring with it a new baby, due in March. I am thoroughly looking forward to this new adventure and to meet this little human. 18.01.2022 This week is National Nutrition Week So I want to take this opportunity to chat with you about fruits and vegetables! Did you know that only 4% of Australians eat enough vegetables? That’s 4 in 100!! And only around 50% of us eat enough fruit. Why is this alarming? ... We know that poor diet and inadequate fruit and vegetable intake is linked to many chronic conditions. Along with diabetes, heart disease, cancers, poor diet is believed to be linked to negative mental health including depression and anxiety. Poor diet can also impact your memory and learning. So what can you do? It’s as simple as adding in some extra fruit and vegetables into your diet each day. What do the guidelines suggest is adequate vegetables and fruit? 5-6 serves of vegetables A serve of vegetables is 75g 1/2 cup cooked vegetables 1 cup salad 2 serves of fruit A serve of fruit is 150g or 1 piece of medium fruit like apple or a banana 2 smaller piece of fruit like nectarines or kiwi fruit This could be: * hummus and vegetable sticks as a snack in the afternoon * blueberries and yoghurt as a mid morning snack * add salad to your sandwich at lunch * add an extra cup of vegetables to dinner * cook a banana into your morning porridge * add vegetables like spinach and mushrooms to your omelettes * snack on edemame beans as an entire * add some lentils to your nachos ** frozen and canned vegetables are perfect too!
