25.01.2022 Spring Mezze board Falafels: 1.5 cans chickpeas 1/2 cup red onion, roughly chopped ... 1 bunch parsley, roughly chopped 1 bunch cilantro, roughly chopped 1/2 bunch mint roughly chopped 3 garlic cloves crushed 1 tsp cumin 1 tsp salt 1/2 tsp cardamom 2 tbsp buckwheat flour 1/2 tsp baking soda sifted 1/4 cup Olive oil 2 tbs of sesame seeds (optional) Hummus: 1 can (400g) organic chickpeas, drained & rinsed 2 tsp lemon juice (fresh lemons only!) 1/4 cup olive oil 1/4 cup of water 2 tbs tahini 2 garlic cloves (1 large will do) 2 tsp cumin (optional) 1/2 - 1 tsp salt Tabbouli 1 bunch flat leaf parsley 1/2 bunch of mint 3 tomatoes 1/4 cup dried cranberries 1/2 tbs olive oil 1/2 lemon Pineapple 1 pineapple skin removed & cut into chunks 2 tsp cinnamon 2 tsp rapadura sugar 1/2 tbs coconut oil Cauliflower: Tandoori spice mix (1 teaspoon each of the following: ground ginger, ground cumin, ground coriander, paprika, turmeric, salt) 1 head of cauliflower ( florets only stalk removed) 1tbs of coconut oil Mint yogurt : 1/2 cup coconut yogurt 1/4 cup of chopped mint leaves 1 garlic clove crushed 1 tbs honey (melted if natural ) Olives & flatbread to serve METHOD: Hummus: Place drained chickpeas into a saucepan of boiling water for 10 mins until softened. Drain & rinse them under cool water & then strip their skin off NB: This step is optional but creates a smoother, creamier hummus. Place the chickpeas in the food processor & blend until smooth, stopping to scrape down the sides as you go. With the processor running, add the remaining ingredients & blend for about 5 mins until the mixture is smooth & creamy. Adjust to taste with salt & lemon juice as needed Set aside & move onto the Falafels.... 24.01.2022 BLOAT FREE BREAD (AKA SOURDOUGH) If you’re anything like me, you look like your in your early stages of pregnancy after eating bread & it’s not a nice feeling so you avoid it like the plague, which is a sad situation cause, honestly, what’s life without bread? This is where sourdough saves lives. It is the exception to the rule (for me anyway). The fermentation process of sourdough produces a bread that is way easier for my stomach to digest and I don’t seem to have the same... issues I do with normal white processed bread, plus,it is way better for you & a thousand times more delicious. This is a loaf that I did after six months hiatus! I am lucky enough to live down the road from our local bakery BAKED UPRISING (for non novacastrians this is the bakery of all bakeries) so the motivation to get off my bread filled ass & cook my own was loooowww. A good ‘city loaf’ is hard to beat, can I get an AMEN?! BUT Now the weather is warming up, the fermentation process is quicker & my motivation to bake is rising so watch this space. I also have a Sourdough queen who lives next door & she is sadly moving her kingdom elsewhere, so I need get all her bread knowledge before she goes Dont leave me @dorzawombat !!!!!! I’m not going to write my recipe here because it’s lengthy & complicated but I am going to post a link in the comments to a great recipe for people starting out. Making & baking sourdough is truly an art form (that I still have not yet mastered) It’s something you will fail miserably at many times before you succeed. Despite this, it is highly addictive- be warned it can become an obsession & the pit of sourdough knowledge is deep. Knowing all this, I hope you are inspired to bake your bread & eat it too. Support farmers that are making changes for the future. Get inquisitive about regenerative agriculture & encourage humble conversation & discussion about it.

09.01.2022 Ok. So we are all clear, eating well & responsibly isn’t easy first up. It means changing habits which none of us like doing. But one thing that helped me massively was having the approach that this is a LONG TERM thing. I can take as long as I want with this. I can change my approach to shopping, cooking, & eating slowly. I can have days where I eat what I want & not feel guilty cause I know this is LONG TERM. I haven’t failed just cause I treat myself. I can start by just e...ating super well every breakfast or 2 breakfasts a week or one breakfast a month! Take it in your stride. Also know that when you do it slowly you can learn along the way that healthy (& for me meat & dairy free) isn’t boring. Trust me there are so many just as tasty (if not tastier) healthy, fulfilling & body nurturing meals out there you just gotta look !! Take ur time. Find food that interests you before you start. Learn about what each ingredient does & how your body uses it. It’s kinda interesting & for some nerds a bit exciting!!!
