17.01.2022 Ive been playing in the kitchen and have come up with my own version of beetroot hummus. It made a very yummy lunch scooped up with three Ryvitas. I was a bit heavy handed with the garlic, so there will be no need to fend off vampires today. My recipe was not carefully measured, but this is what I did: ... 125g of roasted, fresh beetroot. I used the vacuum packed ones from Farmer Jacks salad section and I roasted them with a drizzle of olive oil and one grind of sea salt,along with a whole bulb of garlic, peeled, for 20 minutes at 180C in my fan forced oven. I used one drained and rinsed can of chickpeas, 2 tablespoons of Tahini. The juice of 2/3 of a lemon, 2 fresh cloves of garlic and a drizzle of olive oil. I blitzed it in the Thermomix, but a regular food processor would be just fine, until I achieved the texture I wanted. I found that I needed to add a squeeze more of lemon juice and a bit more salt to achieve the perfect taste for me. I love garlic, but if you prefer, you could leave out the raw garlic altogether or just try it with one clove at a time. I spooned it into my @the_plate_maker bowl and made grooves with the back of my spoon. I drizzled on more olive oil in the grooves and sprinkled sesame seeds, sunflower seeds and pumpkin seeds on top. Thats it! Bon appetit!
