Cook Time: - Total Time: 15 mins Servings: 2-4 Ingredients: * 1 package cream cheese, softened * 1/4 cup icing sugar * 3/4 cup Nutella * 1 cup thickened cream * 1 teaspoon pure vanilla extract * Pinch of fine sea salt * Fruit, crackers, marshmallows for dipping * Toothpicks for serving Instructions: 1. CREAM CHEESE: In a large mixing bowl, add the softened cream cheese and icing sugar. Beat, with hand mixers, until smooth and creamy. Use a spatula to scrape down the sides as needed. Once smooth, add in the Nutella and beat until combined. 2. WHIPPED CREAM: In a stand mixer fitted with a whisk attachment (or a separate bowl with hand mixers), whip the heavy cream, vanilla extract, & salt until stiff peaks. 3. FOLD: Gently fold the whipped cream into the Nutella mixture using a plastic spatula. Fold until all ingredients are completely incorporated. 4. SERVE: Transfer the dip to a serving bowl and arrange fruit and dippers of choice around the dip. Skewer small berries on toothpicks. Serve toothpicks alongside the dip. Enjoy!

06.01.2022 MANDY’S FAVOURITE RECIPES Mini Sausage Rolls Made in an ice-cube tray a simple and easy treat for the small & big kids!... Prep Time: 10 minutes Total Time: 1 hour 30 minutes Servings: 12 servings Ingredients: * 2 sheets of frozen puff pastry, just thawed * 4 good-quality pork sausages * 1 egg, lightly whisked * Tomato sauce, to serve Instructions: 1. Lightly spray a plastic 12-hole, 40ml (2 tablespoon) ice-cube tray with olive oil. Place 1 pastry sheet over the prepared tray and gently push the pastry into the holes. Squeeze out the sausage filling from the sausage casings, dividing it among the lined holes. 2. Brush the exposed pastry over the edges and centre of the tray with egg. Reserve the remaining egg. Place the remaining pastry sheet over the top. Gently press down with your fingers, then roll a rolling pin over the ice-cube tray to seal edges. Use a sharp knife to trim excess pastry. Freeze for 1 hour or until firm. 3. Preheat oven to 200C/180C fan forced. Grease a baking tray and line with baking paper. Turn the ice-cube tray upside down over a chopping board and use your fingers to ease the pastry out. Use a pizza cutter or sharp knife to cut into 12 sausage rolls. 4. Place the sausage rolls on the prepared tray and brush with the reserved egg. Bake for 20 minutes or until golden and cooked through. Serve with tomato sauce.
