08.01.2022 Instead of making hot cross buns for Easter this year I made Tsoureki, which is a Greek Easter bread. I made it into 6 rolls, instead of 1 loaf. It is a lovely dough, just a little sticky. 2 ingredients I didn't have were mastiha and mahlepi. Instead of skipping them, or the recipe, I asked Mr Google what to use instead. I added a tsp of fennel seeds, a star anise, and some almond essence in their place. In this time of lockdown we don't need to miss out because of things we don't have or can't get, we just need to get creative

I love being able to pop one bowl off and put a clean one one to make a quick bread or biscuit dough in the middle of what I am cooking. I also love to make a dish for dinner, keep it warm in the bowl, then make a side to go with it
