20.01.2022 DONUT LOVERS LISTEN UP! I made the donuts that I posted earlier (Sophia's kitchen jam donuts) and they are divine! So light and fluffy on the inside. I don't have a deep fryer so I just did them in a saucepan of oil.

Variations: - Can use tapioca starch, cornflour, or gelatin powder instead of arrowroot (same amount) - if you use gelatin it won't thicken until it cools, and may need reblending if it separates. - Can swap coconut sugar for dates (same amount, blend up first then continue with recipe), or honey or other sweeteners to taste, but won't taste like caramel with other sweeteners. - For an egg free custard, try the egg-free variation at the bottom of this recipe, and use coconut sugar instead of honey: https://www.quirkycooking.com.au//cashew-honey-vanilla-be/ (The cashews help to thicken the custard so don't strain out of the milk.)
