25.01.2022 So remember that Chocolate Mousse Cake I made last week; (scroll down the page to check it out!) well I might have whipped up another one! But I had the best idea to make them into the right portions to use my new silicone mini loaf pan I got from the Thermomix shop. It was the best idea ever! Neat; tidy and the perfect individual size. I did run a butter knife round the edge before popping them out and they came out perfectly. the tray has a steel frame around the... edge too so it's really sturdy! I'm impressed! These guys, along with yesterday's balls are all going in the freezer; for those moments where I need a little sweet something. I'm going with the "out of sight out of mind" idea to help beat those sugar cravings. So far so good! 25.01.2022 Slow cooked tumeric chicken bone broth! I used 1 left over chicken carcass; about 1.2L of water; splash of ACV; few bay leaves; 1 onion, few cloves of garlic, sprinkle of turmeric, salt and pepper. Blade cover in first; add the above ingredients; 6hours; 95C slow cook function on my TM6. ... It made the most delicious; jelly like bone broth! Very impressed with this batch!

24.01.2022 I just can't pass up a deep dish Egg & Bacon Pie. It's even better when the pastry is gluten/grain free thanks to LCHF Thermo Foodies Chia Pastry. No bloated feeling in the tummy makes for a happy mummy! The filling is from the Quiche Lorraine from the Basic Cookbook also available on Cookidoo. I doubled the filling to ensure I got that nice family size quiche and used all cream! 23.01.2022 Another year older today and another fabulous birthday cake whipped up my partner and my son; seriously how lucky am I?! Its a Torta caprese & we love it. A decadent chocolate mud cake; thats made from almond meal; topped with dark chocolate ganche; grated caramilk chocolate and chocolate fingers around the outside. Its very rare to get a special like this down here in Tassie but our local fruit and vege shop had strawberries on sale; advertised as being good for jam; so a lovely customer picked me up 2 trays worth after I shared the special with her. All these berries for only $10!! After I had topped them and got rid of the not so good ones Ive got 5.5kg of delicious strawberries for the freezer! 21.01.2022 When dad sends me a message asking what Ive got cooking its normally code for "are you going to drop some in to me?" Sure thing dad! Just under 2 hours in the kitchen from start to finish; this includes ducking to the shop for a couple of ingredients; 3 phone calls; answering half a dozen messages; and washing all the dishes by hand (unfortunately we dont have a dishwasher!) And this is what i was able to whip up! Realised I was out of chicken stock paste so I ...started with that then; Hug in a mug chicken soup Banana and white choc muffins Meatballs in tomato sauce (I doubled the meat; this gave me enough meatballs for 2 batches; but left the sauce as standard because it makes so much plus I add a truck load of vege and blitz up to make it more filling and it goes further. And a cheesy garlic pizza. Super grateful for my 2 thermomixes for making it so easy to create nutritious and delicious food without a fuss. Even better that I had everything on hand other than some bananas and some salt for the stock!

I pop the zucchini noodles in the varoma to steam for 10mins while the Bolognese finishes off cooking! 17.01.2022 Gluten and Grain free Chicken Parmy with steamed vege! I loosely followed the recipe from Skinnymixers with a few short cuts as below: crumb as per recipe... tomato sauce was a tin of crushed tomatoes ; 2 cloves garlic; table spoon of tomato paste; tablespoon of Italian herbs; whiz on speed 7 for 20secs. butterfly a chicken breast in half dunk the chicken in an egg wash crumb coat bake it in 180c oven for 10mins then top with Tom sauce and cheese and back in the oven til cooked. https://skinnymixers.com.au/skinnymixers-grain-free-chicke/

14.01.2022 A Sunday well spent cooking up a storm with this fun loving crew! These are my Thermostars! Once a month we get together and cook in the Thermomix. Today was our first workshop back since COVID interrupted our sessions. So it had been a few months but these guys jumped straight back into it! We normally cook direct from Cookidoo using guided cooking but today I challenged them with a muffin recipe from the recipe community so they had to manually make it together (setting the time temp and speed as per the recipes instructions); and they smashed it! We then jumped onto Cookidoo and made the Sticky Sesame Chicken. It was a big session but worth it! These guys are so incredible; super proud of there efforts today! Thermomix in Australia

13.01.2022 Whats the number 1 rule you can remember about using your butterfly in your Thermomix?? That you should never go over speed 4 of course; otherwise it will come off inside the bowl and get chopped up. So heres what happens when you pop it on speed 10 for about 3 seconds! ... In 8 years of being a Thermomix owner Ive never ever chopped up a butterfly; until last night; at a cooking experience and I did it exceptionally well!! Who else has done this?? Tell me Im not alone?!

Wanting something a little lighter last night so we heated up some of the beef fajita mix; served it over left over salad; grilled corn on the cob and hard boiled some eggs in the Thermo. Left over cauliflower hashbrown topped with scrambled eggs, smoked salmon, pan fried haloumi, garlic mushrooms, a good dollop of sour cream and freshly cracked pepper. Next time I'll make some hollandaise sauce to top them with to take it to the next level ... I make my scrambled eggs with cream and parmesan, they are the bomb! Hash Browns reheated in the fry pan for a minute or two each side. Super impressed with how these have lasted in the fridge. They were still nice to eat cold. You could definately prep them for the week for an easy breakfast! 09.01.2022 7 years of sharing the Thermomix far and wide and loving the roller coaster journey it has taken me on! Lots if memorable moments with my wonderful customers who have become friends; and of course with my fellow team mates from the Delightful Devils here on the NW Coast; just like one great big extended family! Who new all those years ago when I said yes to joining the business that I would have learnt so much about cooking and food; travelled so far; earnt so many Thermomixes and freebies along the way; but most importantly been able to continue to share something that makes such a difference in my own families life on a daily basis with so many other people. Hands down the best decision I ever made.

08.01.2022 See You in 3 and half hours! Dinner is on in the Thermomix slowing cooking away. First I used the built in fry pan (high heat function) to sautee my garlic and onions for lots of flavour; added some more ingredients and whizzed up a sauce (blending function); inserted my blade cover (stops food from touching the blades!) ; added WHOLE chicken thigh fillets and set it my thermo to slow cook (another awesome built in function) So while dinner cooks; Ill go and run my son to soccer training; the vege are prepped ready to steam in the 2nd thermo so I just have to turn it on when we get home! Simplicity at its best!

07.01.2022 Mid week Roast meal; cooked to perfection! Roast chicken & roast pumpkin in the oven; seasoned with a herb and garlic salt made in Thermo! Peas; corn, carrots and broc steamed and cooked just how we like them in Thermo 1 ... Cauliflower Mash (with added parmesan, splash cream and salt when mashing) steamed and mashed in Thermo 2.

06.01.2022 Spring is officially here so you know what that means? Time to give your Thermo bowl a little TLC (yes I have shared this before but its a great reminder for everyone to give there Thermo some TLC!) I do this when ever my bowl is looking a little cloudy in the bottom or something has stuck to it. This method is suitable for all Thermomix models. Keeping your bowl spick and span will also help eliminate the chance of things sticking to the bowl when cooking. The build ...up on the bottom is sometimes what causes the food to leave a brown residue on the bottom of your bowl. This method will also help to lift any odours from curries and similar dishes from your bowl. Check out each picture for a step by step method! its super easy; cheap; quick and your thermomix will love you for it! Post in the comments below how you go cleaning your bowl using my method! 06.01.2022 Beef Teriyaki for the win tonight! Followed the Chicken Teriyaki recipe from Cookidoo and swapped the chicken for beef. Easy as! I wanted to use 500g of beef (recipe is only 250g); so I cooked the meat in 2 lots to ensure I made the most of that built in fry pan (high heat function) searing my meat off to perfection! 04.01.2022 Almond crusted Salmon with steamed broc Yum this was so good! It has a delicious honey mustard sauce then topped with the crumbed and baked in the oven; the recipe is served with pasta but I skipped that and went for some greens. Perfection! In place of the bread crumbs in the recipe I used a gluten free roll ... Next time I make it I will do the crumb first then the sauce second; my bowl had a little sauce left in it and it made the crumb turn into more of a thick paste; but it crisped up ok in the oven. 03.01.2022 Oh I do love the start of a new month when Thermomix announce the new and exciting free gift with a TM6 purchase!

03.01.2022 So lets talk about that slow cooked chicken dish from yesterday using the BLADE COVER......WOW!!!! First up the meat; Im so so impressed. I used chicken thighs; I just cut each one into 2 pieces; it was so tender; and juicy! Really enjoyed the texture of the chicken. I used the BLADE COVER and this stopped the meat touching the blades and breaking down. It was my first time using it and Im impressed! Very impressed. Also the slow cooking function on the tm6 is a game ch...anger for me! Slow cooked; tender meat cooked to perfect! Keen to try some other meats with the bone in now like some drumsticks or lamb shanks! The recipe is actually meant to be severed with rice; I just steamed some vege instead though HOWEVER it makes an absolute truckload of sauce; that was actually a little runny so I imagine the rice would soak most of it up; Ive kept the left over sauce though; its just like a soup and will use it in another dish. Flavour wise; I was supposed to marinate the meat for at least 30 mins; so this is the kind of dish you could prep the night before and cook the following day; I didnt have time to wait so just cooked it straight away; it could do with a little tweaking; its a basic tomato; capsicum sauce. Next time Ill add some extra herbs. Maybe even some chopped up vege to give it a more chunky sauce. It does have chilli in it which I reduced too. Overall Im pretty happy with it. If you have fussy kids that like simple food with not too many flavours this will tick the box; its easy enough to add some extra herbs and spices to boost the flavour for the grown ups. Blade cover is a big winner in my eyes and has opened up a new way of cooking with the Thermomix!

I think my partner must have bumped his head at work today ; or maybe it was the weather .....but while I was off running our son to soccer training he got busy in the kitchen and made a cake and not just any cake; this one is LCHF compliant!
