30.05.2022 This is my fave way to make fried chicken Make buttermilk - place 2 cups of full cream milk & 3tbs white vinegar in a bowl & set aside for 30 minutes (this is a great way to use the last of your milk if its at the end of its life) ... Meanwhile, follow this amazing recipe to make your seasoned flour https://www.recipecommunity.com.au//gpc52qu3-ac642-521693- (I double this recipe so I have a batch ready to go for a quick dinner) my personal alterations to the kfc chicken are as follows: I like my chicken spicy so I add 1tsp chilli powder & 1/2tsp cayenne pepper Once your buttermilk is nice & thick, stir it. Add 2 chicken breasts that are cut into strips. Cover the chicken with the buttermilk & place in fridge for 1 - 3 hours (just depending on how much time you have) Remove the chicken & buttermilk from the fridge Shake excess buttermilk off & dredge into seasoned flour. Repeat with all chicken pieces. Then, working with one piece of chicken at a time, dredge it back into the milk & again into the flour. Once all chicken is double coated, set aside for 5 minutes while you get your oil ready heat up cooking oil of your preference in a pan(check temperature is ok by dropping a little but of bread into it & make sure it bubbles, if it burns right away- your oil is too hot add chicken to hot oil, flipping after a few minutes. Continue to flip chicken to ensure even cooking. Cook until outside is golden & inside is cooked through (it takes me around 10 minutes) Place chicken on a plate with paper towel to drain Serve with your fave sides & sauce (I love hot sauce with my chicken & tonight we had it with coleslaw
27.05.2022 Pepperoni Pasta for lunch 200 grams sliced Pepperoni (I got a delicious one from a market over easter) 3 cloves garlic 1 tspn fennel seeds, lightly bashed with mortar & pestle... 1 tsp chilli flakes 1 cup torn basil leaves 100 grams parmesan cheese 1 tbs tomato paste Zest of 1 lemon 1 quantity fresh pasta Cook fresh pasta in boiling water until aldente Add 1 tbs olive oil to thermomix, cook pepperoni on high heat function for 2 - 3 minutes Add crushed garlic, cook 2 mins, varoma, reverse 1. Add fennel seeds, chilli & tomato paste. Cook for 2 minutes varoma, reverse 1. Stir with spatula Place cooked pasta in thermoserver & stir through the tomato pepperoni mixture. Add lemon Zest, basil, salt, pepper & the parmesan cheese, stir through pasta & its ready. you can use the thermomix for grating cheese & crushing garlic I added 2 tbs water from cooking the pasta to the thermoserver to help sauce coat the pasta
