25.01.2022 Roast Pork Loin. To make the perfect crackling - score rind, pour boiling water over rind, dry well with paper towel, massage liberally with oil and salt. Bake at 220deg (depends on your oven) for 30 mins and then reduce to 180 until cooked. I used the meater to cook this, perfect meat every time #thermomixmeater #meatthermometer



24.01.2022 Looks can be deceiving...it is actually delicious! Loosely followed an insta story from @staceyclare_healthcoach as I can’t remember exact ingredients ... mango ice cream. I added sunflower seed and hemp seeds (sp9 for 15 secs) added a few handfuls of frozen mango, 2 good dollops of yoghurt and whizzed it all up sp8 until it all came together nicely. I stopped the thermomix a few times to scrap down the sides of the bowl. Special treat for the kids after first day back at kindy. They think it’s Christmas all over again! TIP: freeze fresh fruits when they are in season. 04.01.2022 Dinner tonight was chicken wraps. Chicken was crumbed in a homemade mix: Handful of almonds - Sp 8 for 10 secs Clove of garlic, few slices of bread, 2 handfuls of oats, S&P - Sp6 for about 10 secs ... Toast crumb in 180deg oven for 5 mins. Coat chicken in flour, egg, crumb and put in oven for 20 mins or so. Wrap recipe I used, Flour Tortilla on cookidoo. When you fry them off, sweat them in the thermoserver. Makes for delicious, soft wraps. You won’t be able to go back to store bought wraps!

Recipe from a friend who said key is lots of olive oil and salt...fry off an onion in lots of olive oil over low heat until soft, add diced extra ripe Roma tomatoes with a good sprinkling of salt, cook until nice and soft, crack in eggs, cover until eggs cooked to your liking. I still can’t make it as good as my friend, still perfecting! Serve with sourdough
