23.01.2022 One of the million reasons I love my thermomix(es) - they make my life so much easier!! So we only got back late this afternoon but I was able to quickly make soup for dinner, apple pudding for dessert & hommus & bliss balls for snacks during the week. I also managed to unpack, unload the dishwasher & do a couple of loads of washing as well as get the kids bathed & showered. The fact you can leave it to do its cooking thing is a life saver for me
21.01.2022 I’ve got 2 pretty happy campers right there eating raspberry icecream made using our @westerwayraspberryfarm raspberries in our @alycealexandracookbooks ice cream moulds I made a raspberry coulis using raspberries & water & set this aside. I then made the 3 ingredient icecream (cream, condensed milk, vanilla) from the recipe community & mixed them together. 20.01.2022 A great salad for lunch or dinner & delicious hot or cold. This is the brown rice with warm mustard dressing salad from Good food gluten free on Cookidoo. The rice is cooked in the steaming basket while the chicken steams up top in the Varoma. You then make the dressing & can also choose to make your own mayonnaise as well if you like. 18.01.2022 I can’t remember the last time we had jacket potatoes but given how successful these were with Archie & Scarlett & the number of hidden veggies we will definitely be having them again! I made the mince sauce yesterday so only had to put the potatoes in the oven this afternoon making an easy, stress free meal time Veggies included carrots, zucchini, celery, onion, garlic, capsicum & the sweet potato. I left the chillies out so it wasn’t spicy for the kids! ... 16.01.2022 Happy Sunday! It’s a very miserable day here in Hobart but we have started the day off right with pancakes! Sweet potato ones to be exact & they are a huge success! Basically normal pancakes but with puréed sweet potato added as well. I didn’t use canned sweet potato (can you buy that in Aus??) but steamed & then mashed some first. 13.01.2022 If you saw my story you would know tonight’s dinner didn’t exactly go to plan. The plan was mince & veggie parcels using Bolognese sauce & filo pastry both from the freezer. The pastry was smashed to pieces & due to my very bad labelling or lack there of I defrosted meatballs instead ... Anyhoo love that pizza dough takes about 2 minutes to make & so meatball & cheese pizza pockets were created. 12.01.2022 I have a massive sweet tooth so I do love a good dessert, especially an instant one! This Raspberry Whip from Cookidoo looks & tastes fabulous I think! Usually I would leave the sugar out but I often find raspberries too tart so I just halved it. It was still plenty sweet enough so I think you could reduce the sugar further if you liked. ... 07.01.2022 This was one of those didn’t quite go to plan things! Today I bring you what slightly resembles The Great Aussie Bite from Cookidoo. It’s cheesecake coated in a Vegemite caramel sauce, sandwiched between 2 chocolate biscuits & then coated in chocolate. It definitely had potential but it took me a while to make & then with the hot weather the cheesecake was sliding all over the place The kids had deconstructed bites for dessert ... For those wondering you can taste the Vegemite in the caramel but it’s not awful & that’s coming for a huge NON Vegemite fan! 04.01.2022 Tonight’s dinner is Pork San Choy Bau with a few extra veggies added. Yum!! Love this dish as I started cooking it at precisely 5:02pm & the kids were eating it by 5:30pm. Plus it had enough long cooking times for me to get the kids in their pjs, put a load of washing on & put the dishes away.
