20.01.2022 Drum roll please....Am starting the LCHF journey today! Boom! And because we have an abundant supply of zucchini this week, I thought of zucchini "bistek". Bistek is a Filipino dish which is basically made of tender beef slices, smothered with this tangy & salty sauce with half-cooked onion slices. Here's the recipe: 500 g zucchini, cut into 1 cm rounds 2 tbsps olive oil freshly ground pepper... Sauce: 1 tbsp hoisin sauce 3 tbsps tamari sauce 2 big red onion, sliced into 1 cm rounds 3 tbsps lemon or lime juice 1 garlic clove, minced 2 bay leaves Optional: pickled ginger slices Stovetop Process: 1. Heat a pan on medium heat. Put in oil. Throw in onions and bay leaves. Cook for just 3 minutes & set aside. 2. Using the same pan, pan-fry zucchini in batches. Put some freshly cracked pepper on one side of the zucchini. Brown each side, which for big rounds, may take around 4 minutes. Set aside. 3. Bring the onions back to the pan (add a tablespoon of oil if need be). Put in garlic and cook for a minute. Put in the hoisin sauce, tamari, lemon or lime juice. Bring to the boil and the sauce should quickly thicken at this point. 4. Put sauce on top of zucchini. Serve with pickled ginger slices on this side! I do the pickled ginger slices as per below: 1. Slice thinly a piece (3 inches) of peeled ginger. Put in a small bowl. 2. Add in 1 tbsp of apple cider vinegar and 1/2 tsp of stevia. Massage to soften and put in the fridge for an hour. Thermomix process (for sauce only): 1. Put in TM bowl the sliced onions, bay leaves, oil (10g additional to the ingredients list) & garlic. Put in timer for 2 miunutes, Varoma temp on reverse speed 0.5. 2. Put in hoisin, tamari, lemon or lime juice. Put in timer for 2 minutes, Varoma temp on reverse speed 0.5. 3. Serve sauce on top of pan-fried zucchinis.
