16.01.2022 KARI AYAM (MALAYSIAN CURRY CHICKEN) First of all, you just can’t beat the authentic great taste of a red-hot chicken curry Secondly, no instant curry mix would rival the fresh and exotic aroma of homemade spice paste of turmeric, fennel, cumin, coriander seeds, and other aromatics.... Rempah (curry paste) are made by grinding up fresh/dried spices /herbs to create a spice paste which is then sautéed in oil to bring out the aromas. The addition of coconut milk makes it milder. This combination of herbs and spices gives the dish an authentic Malaysian flavour and keeps it nutritious, and curry leaves are used to infuse the chicken curry with the intense fragrance of the curry leaves.
